I just received my Recipezaar newsletter, decided to check out their thoughts on cooking potatoes for salad, and lost interest after reading about 10 bulletin board responses...ARRGGG..
There had to have been 75 responses!
The talk was all about using what we in the north call "new"potatoes, of course, instead of the mealy ones that are good for baking and all, and varying opinions on cooking whole or quartered, skinned or not. But I didn't see anything mentioned about solving some of those potato salad disasters.
I mean, when the potatoes are overcooked, uncooked, the wrong kind, or just about anything else that can be imagined.
And what about YOUR potato salad disasters? Can we hear a few?
I'll start off with the overcooked potatoes....I've never made this, but some time ago, I came across a recipe that was from a former first lady of some long time past. I just can't remember it, or who it was....anyway, her salad, that the pres loved, was almost like a lumpy mashed potato than a salad the way we know it. I figured that that would be a good way to solve the problem of overcooking the tubers.....
(I'd probably change plans, make a vichysoisse and go with that, but hey, this is about salads)
We know there will be dozens of returns, by searching the site...I'm interested in real person input.
Any thoughts, or ideas?...or any unusual potato salads?
