    Banana Bread

    Anyone got any good banana bread recipes? What is ur favorite kind of bread to bake?

    Creamy Banana Bread

    INGREDIENTS:

    1/2 cup margarine, softened (used butter)

    1 (8 ounce) package cream cheese, softened

    1 1/4 cups white sugar

    2 eggs

    1 cup mashed bananas (about 3 large)

    1 teaspoon vanilla extract 2 1/4 cups all-purpose flour

    1 1/2 teaspoons baking powder

    1/2 teaspoon baking soda

    3/4 cup chopped pecans

    2 tablespoons brown sugar

    2 teaspoons ground cinnamon

     

    DIRECTIONS:

    1. Cream the butter or margarine and cream cheese together.
    2. Gradually add the white sugar, and continue beating until light and fluffy.
    3. Add eggs one at a time, beating well after each addition.
    4. Stir in the mashed bananas and vanilla.
    5. Add flour, baking powder, and soda; mix until batter is just moist.

    6. In a small bowl, mix together chopped pecans, 2 tablespoons brown sugar, and cinnamon.

    1. Divide 1/2 batter into two greased and floured (I sugar-coated) 8x4-inch loaf pans.
    2. Sprinkle pecan mixture over batter in pans, and top with remaining batter.

    9. Bake at 350 degrees F (175 degrees C) for 45 minutes, or until an inserted toothpick comes out clean.

    Makes: 2 loaves

     

    Note: I also added 1/4 cup milled flaxseed (extra fiber)

    That sounds scrumptious.. I love creamcheese in recipes.. You ever been to CreamCheese.com before?  They got some great tools on the site.. if u like cheesecake..they got this cool Cheesecake Recipe Planner that lets u create ur own cheesecake and they give u instructions on how to make it.

    Banana Bread

    3-4 ripened bananas (mashed)

    2 cups flour

    1 tsp. baking soda 

    1/2 tsp. salt

    Cream butter & sugar.  Add eggs and nuts. Stir in mashed bananas.  Add remaining ingredients.  Pour in greased pans.  Bake at 350 degrees for 45-55 minutes until done.  If you make mini loaves, about 30-35 minutes.  If you make mini muffins, 12-15 minutes.

    here is a very good yeast banana bread recipe

            BOLD BANANA BREAD

    (Different and very good)

    1 package dry yeast

    2 2/3 cups bread flour

    1 1/3 cups rolled oats

    3/4 cup mashed banana

    2 Tablespoon honey

    2/3 cup warm water

         for bread machine:

    put flour and rolled oats, yeast, mashed banana's olive oil and honey. Pour in warm water(about 80 degrees) set on regular bread maker setting and start.

      For oven:

    Plave dry yeast in a large mixing bowl add warm water, somewhere between 110 and 115 degrees F. stir with spoon till dissolved. Add roled oats, mashed banana's, olive oil,and honey. stir, add about a cup of bread flour and stir vigorously for a couple minutes until well mixed. then add rest of flour, a little at a time stirring after each addition. After adding the last of the flour, stir well until mixture forms into a large ball.  knead dough place in greased bowl to raise till double punchdown and make into loaf and place in loaf pan till double and bakeat 350 for about 45 minutes  (different ovens bake different so watch the bread after 35 minutes.

     

    For a new desseret idea, slice this bread and drizzle white frosting over bread slices,or spread with cream cheese.

     here is the recipe I have been using for years....at least 15....it's from a cookbook put out by home economics teachers in Calif....bought the book from one of my daughters for a school fund raiser way back when...you melt the butter.....which I love cause I can never get the butter and sugar creamed enough for my tastes...

     

    1/2 cup butter

    3 bananas

    2 eggs

    1/2 cup sugar

    2 cups flour

    1 teaspoon baking soda

    1 cup chopped walnuts 

     

    melt butter in microwave in a larger glass bowl....let cool....mash the bananas and add to butter....add in eggs and sugar....blend well with wooded spoon...add in flour and baking soda....mix to combine...add in walnuts....spoon into a loaf pan sprayed with pam....let sit 15 minutes....bake at 350 degrees for 45-60 minutes...

     

    or can be made in prepared muffin pan....let sit 15 minutes and bake at 400 degrees 20-25 minutes....
