Would anybody happen to have the recipe to Beet Bread

My mom made it once, she used shredded beets and walnuts but doesn't  have the recipe so we can't make it anymore. It was delicious and really pretty too...really red. Thanks in advance.

It is seldom that I bake quick breads but since beets and zucchini are much alike in moisture content and texture I would say that if you used a recipe for Zucchini bread and use beets instead of zucchini it should work very well.

This is one I have made successfully. cj

Christmas Red Bread

3 eggs

1 cup oil

2 1/4 cups sugar

3 teaspoons vanilla

3 cups flour

3 teaspoons cinnamon

1 teaspoon salt

1 teaspoon soda

1 cup nuts

2 cups cooked or canned beets, drained, mashed

Red food coloring

Mix oil and sugar and add eggs one at a time.  Add the other ingredients.  Use food color if needed.  Place in two 9x5 loaf pans.  Bake at 350 for 50-60 minutes.

 Wouldn't a recipe for baked goods using shredded carrots work as well with shredded beets? They are both root vegetables, and have similar moisture contents, as long as the beets are not too old, that is...
