    Chicago Apricot Bars

    Chicago Sun Apricot Bars

     

    MAKES 16 BARS

     

    1 cup dried apricots

    Water

    COOKIE CRUST

    ½ cup butter, softened

    ½ cup brown sugar

    2 cups oatmeal

    FILLING

    2 eggs

    1 cup brown sugar

    1 teaspoon vanilla

    1/4 teaspoon baking powder

    1 tablespoon flour

    ½ cup walnuts

    1 cup oats

     

    Cut dried apricots into pieces and simmer in a little water until soft. Drain and set aside.

    Mix together crust ingredients and spread on bottom of a greased 8-by-8-inch square pan. Bake at 350 degrees at least 15 minutes or until set. Let cool.

    Using a electric mixer, combine all filling ingredients, except oats, at high speed. Fold in apricots and oats. Spread on cooled crust. Bake 30 to 35 minutes at 350 degrees.

    WinkWhat great timing, Twinkle.  I just came home from the store, having bought dried apricots.  Thanks.  Must give these a try - sounds like a nice combination of ingredients.
