Oatmeal Banana Bread by twinkle30
Ingredients:
1/2 stick butter, softened
2 eggs
3 or 4 very ripe bananas (very ripe is key. if they aren't, this won't taste like bananas)
2/3 cup sugar (sometimes I do half white sugar, half brown sugar)
1 1/3 cup flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1 cup oatmeal (optional)
1 teaspoon cinnamon (optional)
1 teaspoon nutmeg (optional)
1 teaspoon cloves (optional)
1 dash of ginger (optional)
1/2 cup chopped pecans or walnuts (optional)
1/2 cup chocolate chips
Directions:
- Preheat oven to 350*.
- Combine butter, eggs, bananas and sugar in your mixer.
- When combined, add the flour, salt, baking soda, baking powder, oatmeal and spices.
- Continue until well mixed, and add in the pecans.
- Pour into a well-greased bread pan or 8 or 9 inch round cake pan. (or... a pie pan, like me, because i ran out of clean, appropriate pans)
- Bake for 45 minutes, or until the center is done. (You can poke it with a toothpick to check)
