    baking red potatoes

    I just bought the "Easy Family Casseroles" recipe cards, and found a recipe calling for baked red potatoes. I'm going to wing it, since I can't find any recipes for baking red potatoes. I've boiled, and I've cut up to bake, but have never baked one. I'm going to try at 350. I've checked cookbooks and web sites, not have found nothing on baking red potatoes (except it's not recommended). I can't believe I'm asking a questions that is probably so simple.

    RED POTATO BAKE  
    3 lbs. red potatoes
    1/4 lb. butter
    1 c. water
    1 pkg. dry onion mix
    Slice potatoes (unpeeled) into baking dish. Add butter, dry soup and water. Cover and bake 1 hour at 350 degrees.

    BAKED NEW RED POTATO DOLLARS  
    8 new red potatoes
    1/4 c. butter
    2 green onions, chopped include tops
    Parmesan cheese
    Scrub and dry potatoes, leave skin on. Cut each potato into 3/16 inch slices, keeping each potato intact (don't scatter slices). Butter a Pyrex loaf pan and sit potatoes upright (discard 2 round ends of each) in two rows in it. Melt butter, add onions and pour over potatoes. Sprinkle with Parmesan. Bake uncovered at 425 degrees for 1 hour. Reduce heat to 375 degrees and bake 30 minutes longer or until tender. Turn out on platter to serve. Serves: 6.

    I have baked red potatoes in the microwave.  On the bag of potatoes it said to scrub them and put them on a paper towel and microwave on HIGH.  It worked out fine and I have done it several times.  Time depends on how many you are doing at once.

    A potato is a potato, red, white or yellow, they all bake te same. The only difference is inside texture . Russets are more dry and fluffy and best baked or for mashed potatoes. Red ones are better for potato salad and home fries  and just ok for everything else. Yukon Gold is a good  multi- purpose potato.
