    Crumb topped broccoli

    There was a recipe in one of the Reiman magazines for a broccoli casserole that was like a souffle with a butter cracker crumb topping. It would have been in a July/August 2003 issue or before. Broccoli was the only vegetable included in the casserole. Please post this recipe if you find it. Thank you.

    Broccoli Casserole

    2 packages frozen broccoli
    1/2 stick margarine
    1/2 roll Ritz crackers, crushed
    1 can cream of mushroom soup
    1/2 pound Velveeta cheese

    In a saucepan, cook the broccoli until tender. Remove from heat and drain. Place half of the broccoli in a buttered casserole dish. Sprinkle evenly with the crushed crackers. Add half of the cheese, half of the margarine and repeat. Pour the mushroom soup evenly over all. Bake for 30 minutes at 350-degrees.

    The recipe had beaten eggs and chopped broccoli in it.

    I am looking through a new cookbook and saw this recipe. Thought I would post it for you.

    BROCCOLI SOUFFLE

    1 (20 oz.) bag frozen broccoli
    1 med. onion
    6 T. butter
    2 T. flour
    1/2 c. water
    1 (8 oz.) jar Cheese Whiz
    3 eggs, slightly beaten
    cracker crumbs
    butter

    Boil broccoli in salt water, then drain.

    Saute onion in butter 5-10 minutes. Add flour and water until thick. Add Cheese Whiz.
    Pour broccoli into cheese mixture. Take eggs, and work into broccoli and cheese. Pour into casserole. Tope with cracker crumbs and butter that have been mixed together.
    Bake 350 for 25 minutes.
    Serves 4-6.
    Can make ahead and pop into oven when ready to serve.

    I used fresh broccoli that I blanched slightly, and added 1 cup of shredded sharp cheddar cheese....it is so good! If you like broccoli, you'll love this!

    Here is a recipe like this one, but  a little different. My Mom makes it every Thanksgiving.

    1 large bag of frozen, chopped broccoli

    1 medium onion, chopped fine

    1/4 tsp. garlic powder

    2 eggs

    1 Tbs. flour

    4 oz. butter

    1/2 C bread crumbs

    1/4 C slivered almonds

    12 oz. shredded cheddar cheese

    Salt and pepper to taste

    Butter a 2 qt. baking dish or souffle dish. I use butter flavored cooking spray.

    In a large bowl, combine frozen broccoli, eggs, cheese and all the other ingredients, except crumbs, butter and almonds.

    Mix well and pack into dish.

    In a  frying pan, melt butter and add crumbs.

     Stir to coat the crumbs.

    Pour on top of broccoli and spread out evenly.

    Sprinkle almonds on top and bake in 350 oven for about an hour. If the crumbs start to brown, cut the oven temp and bake until the  center is about 140.

    It freezes well and tastes just as good reheated.
