Mothers Oven Steaks
2 lb beef chuck or round steak-tenderized
2 eggs
1 c. saltine cracker crumbs
1/4 c. olive oil
salt/pepper to taste
1 large onion, sliced
6 T. ketchup
Cut meat into 6 portions. Beat eggs slightly in a wide bowl. Dip beef into eggs, coat with crumbs. In a skillet, heat oil. Brown meat on each side. Season to taste. Place in a 9x13 baking dish. Place 1 onion slice and 1 T. ketchup on each piece of meat. Cover with foil. Bake 1 1/2 hours @ 350º.
