    Quinoa muffins and jello banana bread

    Hope this comes out well. not T and T..

    Quinoa muffins

    350 degrees    makes 12

    1 cup quinoa rinsed         1/4 cup vegetable oil      2 cups flour   3/4 cup packed brown sugar

    1 1/2 tsp.  baking powder    1 tsp. salt     1/2 cup raisins   3/4 cup milk  1 large egg   1 tsp  vanilla

    Preheat oven to 350.  In a medium sauce pan bring quinoa and 1 cup water to a boil reduce to a simmer, cover  and cook until water has been absorbed and quinoa is tender.  11 to 13 minutes.  prepare a 12 cup muffin pan with oil and dust with flour,  in a medium bowl wisk together flour, sugar baking powder and salt and raisins and the now 2 cups cooked quinoa, reserving any leftover for another use...   In a small bowl whisk together oil, milk, eggs and vanilla, add  milk mixture to flour mixture and stir until just combined,  divide into muffin pans.  Bake until toothpick comes out clean    25 to 30 minutes.  let cool 5 minutes transfer to wire rack to cool    store in an airtight container up to 5 days.     

    Now Jill where do  you buy quinoa   is it like oatmeal. 

    JELLO-BANANA BREAD

    I have not seen this recipe before. If you try it, let us know!
    1/2 c. margarine
    3/4 c. sugar
    1 egg, beaten
    3 tbsp. milk
    1 1/2 tsp. baking soda
    1 c. mashed bananas
    1 (3 oz.) pkg. Jello, any flavor
    (apricot or strawberry are good)
    1 tsp. baking powder
    2 c. flour
    Cream butter; add sugar and egg. Mix well. In separate high
    bowl, combine milk, gelatin and soda. Mix; will fizz. Add
    bananas. Mix together with butter mixture. Add flour, sifted
    with baking powder to mixture and mix well. Pour into greased
    9 x 5 inch loaf pan. Bake at 350 degrees for 40 minutes until
    toothpick comes out clean. Cool 10 minutes. Remove from pan.

    Shirley, quinoa is a type of grain.  It cooks like rice and has texture between rice and couscous.  Health food stores would have it and some grocery stores ,probably near rice but also check near couscous .

    Shirley, I have found quinoa in the special dietary needs section of my stores (ds shouldn't have wheat, soy, dairy, eggs or peanut).  If you shop in any stores that sell bulk foods, that would be a good place to look.  I can get it in bulk for about half the price of the packaged stuff.
