    REC: Corn and Crab Chowder

    6 slices bacon

    2  ribs celery,diced

    1 bell pepper,diced

    1 onion,diced

    1 jalapeno pepper,diced

    1 ( 32 oz.) ctn. chicken broth

    3 Tbsp. flour

    3 cups fresh corn kernels

    1 lb. lump crab meat,drained and picked

    1 cup whipping cream

    1/4 cup chopped cilantro

    1/2 tsp. salt

    1/4 tsp. pepper

    Cook the bacon in a Dutch oven over medium heat till crisp;remove bacon and drain on paper towels.Reserve 2 Tbsp. of the drippings.Crumble bacon.Saute celery and next 3 ingredients in drippings 5-6 minutes till tender.Whisk together the broth and flour till smooth.Add to celery mixture.Stir in corn.Bring to a boil;reduce heat and simmer,stirring occasionally,for 30 minutes.Gently stir in  crab meat and the next 4 ingredeints;cook 4-5 minutes till heated through.Serve with crumbled bacon over each bowl.

    Shrimp or cooked chicken can be substituted for crab. Depo!!!
