    Have a tea party with your kids, mom & sisters, friends, neighbors....
     
     
    SETTING THE TABLE
     
    lace tablecloth
    rose petals scattered on tablecloth
    vase of flowers in center of table
    candles
    pearl necklaces lying near vase
    napkins (linen or paper) left of plate, open edge to right
    paper doilies under food
     
     
     
    MISCELLANEOUS
     
    classical music playing
    decorate room with purses and hats
     
     
     
    DISHES
     
    china teacups (use a variety, do not have to match)
    china tea plates
    tea pot
    small bowl to put tea bags into (if using individual bags)
     
     
     
    FOOD
     
    food should be served in 3-tier server
     
    bottom ~ sandwiches
    middle ~ scones
    top ~ sweets
     
    sandwiches - rolled, layered, tarts, cheese and prosciutto, mozzarella and tomatoes, thinly sliced cucumber sandwiches, raspberry and cream cheese, ham and apple, cherry tomatoes filled with cream cheese as decorations between sandwiches
     
    scones - serve with Devonshire cream, jam, cream cheese spread
     
    sweets - small tarts, strawberries dipped in chocolate, dried apricots dipped in white chocolate, mini cupcakes, petit fours, mini fruit kabobs, hollowed cantaloupe filled with melon balls and grapes, lemon cheese tarts, mini meringue cups, mini lemon cupcakes,
     
     
     
    TEA
     
    cubed sugar served with small tongs
    milk NOT cream
    lemon slices served with lemon fork
     
     
     
    OTHER BEVERAGES
     
    ice tea
    decaf coffee
    water with lemon or lime slices
     
     
     
    TEA PARTY FAVORS

    MOCK DEVONSHIRE CREAM
     
    3 oz cream cheese
    2 tbsp sugar
    pinch salt
    1 cup whipped cream
     
    Mix. Whip in whipped cream until soft peaks form. Chill.

    FANCY CAKE
     
    yellow cake mix
    4 eggs
    3/4 cup water
    2/3 cup oil
    1 tsp lemon extract
    small box jello
     
    Mix altogether according to directions on cake mix. Pour into a cookie sheet, bake at 350 for 45 minutes. Cool. Ice. Cut into small squares.

    PETIT FOURS
     
    store bought pound cake
    jelly
    2 cups powdered sugar
    water
    gel tubes
    sugar decorations
     
    Cut cake into 1/2-inch slices, trim crusts. Use 2 slices and jelly to make jelly sandwiches. Cut into small squares. Freeze.
    Mix powdered sugar and water until smooth and drizzly. Set cake on wire rack over wax paper. Spoon icing over cake until completely covered. When dry decorate with gel and small decorations.

    TEA PARTY SCONES

     

    2 cups flour
    1/4 cup sugar
    2 tsp baking powder
    1/4 tsp salt
    1/3 cup cold butter, cut into pieces
    1/2 cup whipping cream or milk
    egg, lightly beaten
    1 tsp pure vanilla extract
    cream


    Preheat oven to 375, and place the rack in the middle of the oven. Line a cookie sheet with parchment paper. 

     In a large bowl, whisk together the flour, sugar, baking powderand salt. Cut the butter into small pieces and blend into the flour mixture with a pastry blender or two knives. The mixture should look like coarse crumbs. In a small measuring cup combine the whipping cream, beaten egg and vanilla. Add this mixture to the flour mixture. Stir just until combined. Do not over mix.

    Knead dough gently on a lightly floured surface. Roll or pat the dough into a circle that is about 7 inches round and about 1 1/2 inches thick. Then, using a 2 1/2 inch round cookie cutter, cut the dough into rounds. Place the rounds on the prepared cookie sheet, spacing a few inches apart. Brush the tops of the scones with a little cream. This helps to brown the tops of the scones during baking.

    Bake for about 15 - 18 minutes or until nicely browned and a toothpick inserted into the center of a scone comes out clean. Remove from oven and transfer to a wire rack to cool. Serve with Devonshire cream or softly whipped cream and your favorite jam.

    These scones freeze very well.

    Makes about 10.
