    Looking for Make and Cook Later-type Meal Recipes

    We have a friend who is undergoing chemo and want to make a few casseroles or something one-dish for her husband and kids (little). I'd love something that can be frozen so there is food there whenever they need it.

    Really appreciate any imput at all, but really need recipes - if you have warming instructions, they would also be helpful (to be able to give to her husband) and as I am not much of a cook.

    Spaghetti Casserole

     Chapter: main dishes

    Makes 8 servings


        1/2 lb spaghetti, broken into pcs                              
        1 pound ground beef                                            
        1 onion, chopped                                               
        1 green pepper, chopped                                        
        2 cans diced tomatoes                                          
        1 can tomato soup                                              
        1 can creamed corn                                             
        1 tablespoon worcestershire sauce                              
        8 ozs shredded cheddar cheese                                  
        1 teaspoon garlic powder                                       


    Preheat oven 350*.
    Spray frying pan, 9x13 pan with Pam.

    Cook spaghetti.
    Drain; set aside.
    Brown meat, onion and pepper; drain.
    Put meat mixture in large bowl.
    Add tomatoes, corn, soup, Worcestershire sauce, salt and pepper.
    Add cheese and spaghetti.
    Mix well.
    Put into 9x13 pan.
    Bake, covered for about 30 - 45 minutes.
    Add more cheese on top; cook to melt 6 servings

    NOTE:

    These ingredients sound strange but this is a great casserole.
    I don't break up spaghetti.  Too much trouble.
    I cook it, then with a scissors cut it up into small pieces.This freezes well.  I cook the meat and spaghetti and mix everything else. Freeze in gallon zip loc bags laid flat on freezer bottom. Kids love this.

    Hot Ham & Cheese Pockets gavingrama_oh

    4-8 thin slices of ham

    4 thin slices of American cheese (or cheddar)

    1 (8 oz) can Pillsbury Refrigerated Crescent Rolls

    Heat oven to 375º. Separate dough into 4 rectangles; firmly press perforations to seal. On ungreased cookie sheet press or roll each to form 7 x 5" rectangle.

    Place 1-2 slice(s) ham & 1 slice of cheese on each rectangle. Fold dough in half over filling; press edges to seal.

    Bake 10-13 minutes.

    This makes a quick, easy lunch. If I am making it for dinner I usually serve it with soup and salad. I hope you like it.

    Mushroom Puffs by dessert girl

    4 oz cream cheese, cubed

    1 can (4oz) mushroom pieces and stems

    1 Tbsp chopped onion

    1/8 tsp hot pepper sauce

    1 tube cresent roll dough

    In a blender or food processor, combine cream cheese, mushrooms, onion and hot pepper sauce, cover and process until blended.

    Unroll cresent dough, seperate into 4 rectangles. Press perforations to seal. Spread mushroom mixture over dough. Roll up jelly roll style, starting with a long side. Cut each roll into 5 slices, place on an ungreased cookie sheet. Bake at 425 degrees for 8-10 minutes or until puffed and golden. Yield: 20 appetizers.

     

    Easy-to-Stuff Manicotti

    Quick Cooking

    Even kids can help assemble this simplified Italian entree from Suzanne Runtz of Charlestown, South Carolina. She fills each pasta shell with a piece of string cheese for a deliciously gooey center, then tops the manicotti with a beefy tomato sauce.

    SERVINGS: 6-8

    CATEGORY: Main Dish

    METHOD: Baked

    TIME: Prep: 20 min. Bake: 30 min.

    Ingredients:

    1 package (8 ounces) manicotti shells

    1 pound ground beef

    1/2 cup chopped onion

    1 jar (26 ounces) spaghetti sauce

    14 pieces string cheese

    1-1/2 cups (6 ounces) shredded mozzarella cheese

    Directions:

    Cook manicotti according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in spaghetti sauce. Spread half of the meat sauce into a greased 13-in. x 9-in. x 2-in. baking dish.

    Drain manicotti; stuff each shell with a piece of string cheese. Place over meat sauce; top with remaining sauce. Cover and bake at 350° for 24-30 minutes or until heated through. Sprinkle with mozzarella cheese. Bake, uncovered, for 5-10 minutes longer or until the cheese is melted. Yield: 6-8 servings.

    Hubby had no idea they were stuffed with string cheese!

    Folks, these people have small children, I doubt they would really apprciate mushroom puffs. They need casseroles with VEGETABLES in them, like green beans, peas, carrots, broccoli and such.

    How abput some frozen French Toast for brrakfast. Pasties filled with meat and veggies, some small ones for small children to handle. I am on the run now so don't have time but the people over in RECIPES h will have lots of suggestions and recipes.

    How about a manicotti, or Lasagne dish. If you need recipes let me know. I just sorta throw 4 different cheeses together add some spinach and walaah! Then put a meat sauce over it.

    Chili, sloppy joes, soups, mac & cheese, tuna casserole, lasagna, pasta dishes with sauce+meat/veggies, there are a lot of dishes that can be done in the crockpot like chicken, pot roast, corned beef, brisket, pork roast that make a sauce & can be served over rice, noodles or potatoes, salad (fruit or tossed), raw veggies: carrot sticks, celery, cherry tomatoes - something they can eat w/sandwiches or casseroles.  I've made pizza loaves - just hollow out Italian bread & filI w/cooked ground beef, spaghetti sauce, onion/greenpepper/mushrooms, shredded cheese.  Or, I've made beef sandwiches by cooking the beef w/a little sauce & stuffing rolls with it & then wrapping them in aluminum foil to be reheated in the oven (can wrap them in waxed paper for reheating in the microwave.  love our seal-a-mealer....you can put the bags in a pot of boiling/simmering water & heat them up without dirting a pot.  I would think dishes that just need to be warmed up rather than ones that come with instructions on cooking.  And, with little kids...I'd keep it simple.  The last time I took some meals to someone recovering from surgery they seemed the happiest with an assortment of tea bags....I'm not sure how the patient's appetite is but maybe something like a fruit/nut bread or soup would appeal to them - along w/something heartier for the rest of the family.
