    "June Cleaver Mother's Day Recipes"

    Ingredients:

    2 1/2 to 3 pound shoulder or sirloin tip roast
    1 (16 ounce) can tomato sauce
    1 medium onion, cut into thin strips
    2 bay leaves
    3 tablespoons all-purpose flour
    salt and pepper to taste

    Directions:
    1. Spray slow cooker with non-stick cooking spray. Place meat in pot with fat side up. Pour tomato sauce over roast. Place onion rings over all. Toss in bay leaves. Cover and cook 1 hour on high.

    2. After 1 hour reduce heat to low and cook 6 to 8 more hours. Carefully lift meat out of pot and remove to a warm platter.

    3. Pour drippings through strainer into medium sized saucepan and discard material in strainer. Whisk in flour to liquid. Cook, stirring constantly over medium heat until thickened. Season to taste with salt and pepper, serve alongside roast.

    Baked Blueberry French Toast

    Ingredients:

    1. Italian bread - 8 to 9 thick slices(1 to 1 1/2 inches).
    2. Eggs - 6, large.
    3. Sugar - 1/2 cup, granulated.
    4. Cinnamon - 1 tsp, grounded; 1/2 teaspoon extra(not grounded).
    5. Vanilla - 1 tsp.
    6. Blueberries - 1/2 to 3/4 cup, dried.
    7. Milk - 3 cups.
    8. Brown sugar - 1/4 cup.
    9. Butter - 4 tsp
    10. Melted maple syrup.


    Instructions:

    1. Grease lightly a baking dish (Size: 9x13 inch) and arrange bread slices in it. Sprinkle dried blueberries over the slices.
       
    2. Combine eggs, sugar, 1 teaspoon cinnamon, vanilla, and milk in a large bowl. Whisk to blend well..
       
    3. Pour the egg mixture uniformly over bread. Cover and refrigerate all night. Heat oven to 325 degrees F.
       
    4. Uncover the baking dish. Dust each slice of bread with a few teaspoons of brown sugar and extra 1/2 teaspoon cinnamon. Drizzle with the melted butter. Bake without cover for 50 - 55 mins, or until browned and set.
       
    5. Using a sharp knife, cut around each slice of bread. Lift out with a spatula then. Serve with maple syrup and orange wedges (or fresh berries). You can also serve with warm spiced mixed fruit.

    Yield: 6 to 8 servings.

    Mother's Day Recipes for the day.

    Wake up:  children or husband serve you breakfast (in kitchen or in bed)

    Lunch: Dinner is fixed for you (dishes are done by others) or you are taken out to eat.

    Supper: Ditto to above.

    Ham and Egg Casserole
     
          2 tb butter or margarine
          1 ea onion, thinly sliced
          2 tb flour
          1 c  milk
          1 tb mustard
        1/4 ts ground black pepper
          2 c  cubed cooked ham
          2 ea hard-boiled eggs, sliced *
     
    *If you don't have hard-boiled eggs on hand, start cooking them 5 minutes before you turn on the oven and allow 15 minutes for cooking.
    Preheat oven to 350 degrees F.

    Melt butter in a 1-quart saucepan over medium heat.  Add the onion and cook, uncovered, until soft, about 5 minutes.  Reduce the heat to low.  Blend in the flour and slowly add the milk.  Cook, stirring constantly, until the sauce is thickened and smooth, about 3 minutes.

    Remove the pan from the heat and stir in the mustard and pepper.

    Pour half of the sauce into an ungreased 1-quart casserole; add a layer of half of the ham, then a layer of half of the sliced eggs.

    Repeat the layers of ham and eggs, then pour the remaining sauce over top.

    Bake, uncovered, about 20 minute or until the sauce is bubbly.

     

    mother's day breakfast recipes

     

    Cheesecake Pancakes with Strawberry-Lemon Syrup

          2 c  Buttermilk pancake mix
      1 1/4 c  Water
          1 c  Small curd cottage cheese
          1 tb Sugar
          1 ts Vanilla extract
    Strawberry-Lemon Syrup:
          1 c  Syrup
          1 c  sliced strawberries
        1/2 ts lemon rind

    Preheat griddle.

    Combine the pancake mix, water, cottage cheese, sugar, and vanilla extract in a medium bowl; stir well until blended.

    Pour batter by 1/4 cupfuls ont hot, well-greased griddle.

    Flip pancakes when tops are covered with bubbles.

    For Strawberry-Lemon Syrup:
    Combine the syrup, strawberries, and lemon rind in a small saucepan; heat through, stirring occasionaly.

    Posted by: yuma  I made two sweet cheese balls for later in the afternoon and evening when people just want to snack. They were both extremely good. The little kids seemed to like them too.   Source: From bonnieq 

     

    Chocolate Toffee Cheese Ball 

     

    8 oz. cream cheese softened

     

    1 stick butter softened

     

    1/4 tsp. vanilla

     

    3/4 c. powdered sugar

     

    2 tbsps. brown sugar

     

    3/4 c. mini chocolate chips

     

    1/2 c. English toffee bits.(About 1/3 cup pecans) 

     

    Mix cream cheese and butter and vanilla. Stir in sugars and fold in chips and toffee. Refrigerate 2-3 hours.  

     

    Form into ball and roll in chopped pecans.(I included some toffee bits to roll it in with the pecans.  

     

    I served it with shortbread, but the kids liked it on graham crackers.

    Choco Bars

     

     

    12 oz. Milk chocolate chips

    2 tbsps. Shortening

    30 Vanilla caramels

    3 tbsps. Butter

    2 tbsps. Water

    1 cup Chopped peanuts

     

     

    Melt chips and shortening in microwave. Stir until smooth. Pour 1/2 of chocolate mixture into 8" foil lined pan. Refrigerate until firm (about 15 minutes).

     

     

    Put caramels, butter and water in bowl and heat in microwave. Stir until smooth. Blend in nuts.

     

     

    Pour over first chocolate mixture; refrigerate until tacky (about 15 minutes). Reheat remaining chocolate, if necessary, pour over top, chill, cut and enjoy.

    Mother's Mince Meat Bars 

     

    Yield: 1 pan    

     

    CRUST & TOPPING------------------------------

     

    2 c. Flour

     

    1 tsp. Salt

     

    1/2 c. Pecans; chopped

     

    2 1/2 c. Quick oats; uncooked

     

    1 1/2 c. Brown sugar; packed

     

    1 c. Margarine; melted 

     

    FILLING----------------------------------

     

    1 1/2 c. Prepared mincemeat

     

    1/4 c. Sugar

     

    1 tbsp. Corn starch

     

    1 tbsp. Lemon juice 

     

    Oven 350~.  

     

    CRUST and TOPPING:  

     

     

    Grease a 7x11x2 inch baking pan. Combine above ingredients and mix well. Press half of mixture into pan.  

     

    FILLING:  

     

    Simmer above ingredients until thick. Cool. Spread over dough in pan, and cover with remaining dough. Pat down well.  

     

    Bake at 350~ for 25-35 minutes. Cool in pan. Cut in squares. Store in tin box between layers of wax paper.   ----

    CHOCOLATE CHIP WAFFLE

     

    Makes 3-4 waffles

     

    2 c. all-purpose flour

    2 Tbsps. sugar

    2 tsps. baking powder

    1/2 tsp. salt

    2 eggs, lightly beaten

    4 Tbsps. vegetable oil

    1/2 c. small chocolate chips (I used the mini chips)

    1-1/4 c. milk


     

    Combine all dry ingredients in a large bowl. Stir to blend well. Add the eggs and oil then slowly pour in the milk while stirring with a rubber spatula.

     

     

    Add just enough milk to make a batter which mounds slightly when poured. Stir in chocolate chips & blend well to distribute them evenly.

     

     

    Preheat Waffle Pro. Spoon generous 1/3 cup waffle batter onto preheated waffle grid.

     

     

    Close lid and bake until signal indicates waffle is done. Remove waffle & place on a wire rack to cool for about 30 seconds then serve immediately.

     

     

    This batter may leave some melted chocolate on the waffle grid.

     

     

    To clean, let the Waffle Pro cool & wife off chocolate with a warm moist cloth.

    Mama's Baked Beans

     

    2 (16 oz.) cans pork and beans

    3/4 c. brown sugar

    1 tsp. dry mustard

    1/2 c. catsup

    1 small onion, chopped

    Combine ingredients. Pour in casserole.

     

     

    Top with bacon strips. Bake at 325 degrees for 2 to 2-1/2 hours.

    Chocolate Caramel Bread Pudding 

     

     

    9 Slices White Bread

     

    1 Large Cooking Apple

     

    1/3 Cup Semi-sweet Chocolate Chips

     

    1/3 Cup Chopped Walnuts

     

    12 Caramels

     

    3 Cups Milk

     

    1 Tbsp. Butter

     

    3 Slightly Beaten Eggs

     

    ½ Cup Packed Brown Sugar

     

    2 tsps. Vanilla

     

    ¼ tsp. Salt

     

    Ice Cream 

     

    Cut bread into cubes. Peel and chop apple. Spread bread cubes in a lightly greased baking dish. Sprinkle with chopped apple, chocolate chips and nuts.  

     

    In a medium saucepan combine caramels, 1 cup of the milk and the butter. Cook and stir over medium-low heat until smooth. Add remaining milk and cook until just beginning to bubble.  

     

    Remove from heat. Slowly stir milk mixture into beaten eggs. Stir in brown sugar, vanilla and salt. Pour over bread. Press lightly into bread.  

     

    Bake in a 350° oven for 40 minutes, or until knife comes out clean. Serve warm over ice cream.  -----

    2 large eggs  

     

    1 t. instant coffee -- crystals (optional) 

     

    2 T. water  

     

    1/2 t. baking powder 

     

    3/4 C. all-purpose flour  

     

    Brownies: In saucepan over low heat, melt morsels and butter; cool slightly. In large mixing bowl, beat sugar and eggs.
