    The Best Blueberry Cheesecake




    RECIPE BY: Seasoned Cook



    AWESOME! DELICIOUS! This is my favorite dessert! My family has been a blueberry grower for the market for over 40 years. We have perfected many blueberry recipes and this is one of them! It is absolutely delicious! If you want sugar free, substitute Splenda for the sugar.



    1 cup graham cracker crumbs
    2 tablespoons butter, melted
    1 tablespoon sugar
    3 (8 ounce) pkgs cream cheese, softened
    1 cup sugar
    3 tablespoons all-purpose flour
    1/2 teaspoon salt
    3 egg
    8 ounces sour cream
    1 teaspoon vanilla extract
    1 teaspoon lemon extract
    2 cups blueberries
    1 cup Cool Whip
    1/4 cup sour cream




    Combine graham cracker crumbs, melted butter and sugar. Press into bottom and up sides of a 9 inch springform pan. Bake at 350 degrees for 5 minutes. Remove and let cool.


    Beat softened cream cheese and add 1 cup sugar, flour and salt until blended. Add eggs, one at a time and blend.

    Add sour cream, vanilla and lemon extracts. Gently stir in blueberries. Pour mixture into cooled crust.

    Bake at 300 degrees for approximately 50 minutes. (Cheesecake will be done when it still jiggles in the middle.) Turn off oven and let remain in oven with door open for 20 minutes. Remove and let cool. Cover and chill cheesecake in refrigerator.



    Lightly mix Cool Whip and 1/4 cup of sour cream. Spread over cheesecake and refrigerate for at least 6 hours before cutting.


    Note: Refrigeration time is not included.

    Ok, even though I sized that right in photobucket, it looks HUGE here. Is it as huge to you guys as it looks to me? I may need to just delete it. :(

    The photo doesn't look too big...it looks delicious.  Did you take it?

    LOL, Diana...are you a blueberry fan too? I love the things. We have dozens of bushes and one of my favorite July things is picking the blueberries. Last year a last frost killed them all and it just never felt like summer to me! I thought this cheesecake just looked wonderful. I didn't take the picture, it was the lady who posted it over on Recipezaar. I would love to be able to take pictures like that.

     

    Ok, the weirdest thing has happened to this picture. When I posted it last night it was huge. Now it's exactly the right size. So did it fix itself or did someone on toh reduce it? I guess it's a mystery I will never have the answer to, :)

    Don't change the picture!! It's the perfect size and this looks so good! I am definitely keeping this one in my favorites!! Would be good for 4th of july! I wonder if you could add rasberries or strawberries to this too for the red,white, and blue!! I am going to try that! Thank you so much for the recipe!! So pretty! chuzi

    Jenni, just cheesecake or specifically blueberry cheesecake? I don't think I've ever had a blueberry version, although I've done all sorts of other things with blueberries. Gonna have to do this one myself, :) Chuzi, I am so glad you enjoyed the picture too! If you try it, be sure and let me know how you like it, ok? I think you could easily replace half the blueberries with raspberries, or even strawberries if you cut them into similiar sized pieces. Bet that would be good! Thanks so much, Star

    Did you guys see that Cittie did a review on this and actually made it for her Mom on Mother's Day? She said it was very good, so I'm happy that we can now consider this T&T for us too, :)

     

    I'm glad you enjoyed the picture. I also thought the lady did an awesome job photographing it.
