    I found a great Green Salsa Chicken Enchilades

    This was soo good had to tel you about it. it is on www.Hy-Vee.com  Lood for Green Salsa Chicken Enchiladas. When you fill the tortillas, I put cheese inside the torillas, we like cheese. It was great!  Hope you'll enjoy.

    Any chance you can post the recipe?  I looked for it and couldn't find it, it had alot of good recipes.  I book marked it to look better.

    Here it is - and you're right!  It looks delicious!

     

    Green Salsa Chicken Enchilades

     

    1 16-oz. jar medium green salsa

    1/2 c. heavy whipping cream

    1 lb. cooked chicken breasts, shredded

    1/3 c. chopped roasted red bell peppers

    12 Hy-Vee fajita-sized flour tortillas

    1 c. Hy-Vee shredded cheddar-jack cheese

    Combine salsa and whipping cream in a large bowl; set aside. In another large bowl, combine shredded chicken, red bell peppers and 3/4 cup salsa mixture. Fill each tortilla with 1/3 cup chicken mixture. Roll up and arrange, seam-side-down, in a greased 9-by-13-inch baking dish. Top with remaining salsa mixture, then cheese. Bake at 350ºF for 40 to 45 minutes, or until cheese is golden. Let rest 10 minutes before serving.
