I replied to this once, so if it comes up again, I am sorry.

Here goes.  In an iron roaster on top of the stove heat up some olive oil (you can use vegetable oil if you choose).   Put in a few cloves of garlic - until lightly browned (do not burn) - remove garlic - put in sorloin tip roast and brown on all sides.  When browned add one or two onions sliced, one cup of beef broth and throw in a few bay leaves.  Simmer on slow - for a long time - about two hours.  Then add potatoes and carrots for the last hour of cooking.  Add liquid if needed. The vegetables  become glazed duringt his process and they are delicious. Remove bay leaves and you will find the beef to be very very tender.

    Hope you enjoy

    Thanks Janet,

That sounds great!  If liquid is needed do you add more broth or water?
