Must-have camping foods?

    Must-have camping foods?

    Next weekend is the Vicotoria Day long weekend, first time out camping for most of us up here.  What are your must-haves?  I seem to get stuck on the burgers, steak, and taco salad.  I have a limited freezer, the fridge is a decent size.  What do you like to have, for both meals and snacks?  Any big hints or tips that you have figured out for camping?  I am an old camper, been doing it since I was a baby, but I'm always interested in hearing what others do and eat. 

     

    I usually bring a throw away plastic container with cookie dough, and then when we are sitting around the fire at night, here I come with fresh baked cookies, the suprised looks I get is so worth it!  This time, I am planning on making a lemon dessert that was in Kraft magazine.  One time, I am planning on freezing bread dough and baking bread at the campsite, mmmm, fresh bread and jam, I think that would be a big hit.

    We do a lot of foil pack meals where you throw in some meat, some veggies, some seasonings, and some canned soup -- either beef & barley or cream-of-something -- and let it cook in the fire. We also wrap potatoes in foil and cook them in the coals. Another good foil dinner is salmon with lemon slices and dill on it. Cook until it flakes--serve with rice.

     

    We also have pie irons in which we make all kinds of things. You put the bread slices on the outside and fill the inside with a variety of things, like:

    * pizza sauce, sausage, and cheese

    * corned beef, sauerkraut, and thousand island dressing

    * pie filling -- blueberry, cherry, or apple

    * chicken a la king

     

    We've done the big Mulligan Stew thing where everybody brings a meat or veggie. Throw it all into the pot and let it brew a few hours.

    Man, I forgot the pie irons!  Gonna have to pack extra bread for that treat!

    Polish sausage and sauerkraut with some whole wheat buns. It is easy to put together.

    Precook ribs in the oven and then just set on the grill to warm and slather with sauce. We also like the Zatarans jambalaya mix and then just cook some salmon pieces and lay on top. Grilled pork chops, plain old mac and cheese,

    The sky would have fallen if we didn't have beer brats on the grill when camping!!  Don't think we ever cooked them any other time but they were a must!!

    Also pancakes and bacon for breakfast----always cooked by my middle son------would never get him to do it at home but always when camping.

    We like hot sausages with peppers and onions, steaks or beef stroganoff and even ribs. We do not have a camper, so everything is cook on open fire. I have also made skillet apple cake. This year I want to try skillet pineapple upside-down cake.

     This does not have to be kept cold and makes a lot to share!

    Gooey Butter Cake (Bars)
    Mom3boys

    1 box French vanilla cake mix
    2 eggs
    1 stick butter-melted

    Topping:
    1 8 oz. pkg. cream cheese-soft
    1 box powdered sugar
    2 eggs
    1 teas. vanilla

    Blend cake mix, 2 eggs and butter. Dough will be thick. Spread into a PAM'ed 10x15" jelly roll pan. Mix topping ingredients together and pour on top. Spread evenly. Bake at 350 for 25-30 minutes or till light golden brown. Dust with powdered sugar, if desired. Enjoy!

    Pie Iron Mountain Burrito Pie
    Categories : Camping Recipes

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    prepared taco meat
    salsa
    shredded cheddar cheese
    burrito size tortillas
    grilled onions, bell peppers

    Prepare taco meat at home. Put in ziplock bags and place in camping cooler. You can also saute some onion and bell peppers and put in zip lock bags too.

    At camp: Place a large tortilla on the pie iron. The tortilla will cover both sides of the open pie iron. You will place your ingredients on one side only. Fill with 2 tablespoons of taco meat, a spoon salsa, cheddar cheese and a few onions and peppers. Don't fill too full. Fold the burrito in half and fold in the edges to make a square packet. Close the pie iron and cook for about 3 minutes on each side. Check to make sure you don't burn it. When the tortilla is golden brown it's done. You can spice it up with hot salsa if you like.

     

    Meatloaf in an Onion - Camping

    Amount Measure Ingredient -- Preparation Method

    Use your favorite meatloaf recipe. Slice 6 large peeled onions in half and remove centers. Spoon meat mixture into half of the onion halves. Top with the other half. Place each filled onion on a piece of heavy duty aluminum foil. Bring ends of foil up over onion and fold tightly. Cook on coals 14 to 20 minutes on each side.

    oh the burritos sound amazing!  i actually dont have a pie iron... yet!  i will have to buy one before our next trip out

    We camp often, and always cook on the fire.  I have found a way for everyone to participate in their own meal.  Before we go, I make 1 or 1&1/2" cubes of round steak, boneless chicken, boneless pork, and smokes sausages.  Then, I marinate each kind in their own sealed bag.  Beef and Pork get tenderizer and a BBQ or italian, or even a mustard marinade.  Chicken is great with either an italian marinade, or a peanut butter and orange juice marinade.  BBQ sauce marinade for the sausage.  When it is time to eat, everyone gets their own "wienie fork", and loads it however they want with the marinated chunks, and cooks them over the fire.  This works great with a green salad, or some kind of slaw.

    We always liked to fix Darn Goods. You will need... Darn Goods 2 gal. sized zip lock bags Dutch oven paper towels moisture proof large container 1 cup ea. Powdered sugar, brown, and granulated 2 T. cinnamon 2-3 cans (10 count) biscuits, room temperature 1 lrg. bottle veggie oil Mix granulated sugar and cinnamon in one bag, and place brown sugar, and powdered sugar in the other 2 bags; set aside. Heat oil in Dutch oven. Meanwhile, seperate biscuits and twist each genlty into a 6 in. long spiral. Genlty drop into hot oil; turn when golden brown. Drain on layers of paper towel and quickly drop into selected sugar mixture and shake. Store in container till ready to serve. Variation: You can also drizzle them with melted chocolate in place of some sugars. Buttery Corn on the Cob 1 soup pot 10-12 ears of corn 1 lb. butter S&P Bring water to a boil and add prepared corn and butter; cover and boil until corn is tender. This can be done on the open fire or on a fire pit grate. (It has been so long since I've been camping I'm not sure anymore how long you need to boil them. They are very good and you don't have to mess with buttering them later.) We are finally going to take our Jr. Church kids on an overnight camp out to New Harmony State Park this year. It has been about 5 years since we have been able to take a trip. I'm so excited. I just hope I can still stay out over night and get up able to help do the cooking. (My favorite part.) Cherie - IN †
