    Attn: Linda (cllw) Here's a Potato Recipe for you!! (and I just added more!)

    From Southern Living, April 2008

     

    DEVILED POTAOTES

     

    Baking the potato shells before filling them sets the shape (so they will not break when picked up) and enhances the flavor.  Don't overmix--the texture will be gummy instead of creamy.  Petite indicates a potato about the size of a plum tomato.

     

    14 petite red or yellow oval-shaped potatoes (about 1 1/2 lb)

    1 Tbsp olive oil

    1 tsp kosher salt

    1/4 cup mayonnaise

    2 Tbsp sweet-hot pickle relish

    1 tsp cider vinegar

    1 tsp spicy brown mustard

    1/4 tsp pepper

    1/4 tsp salt

    1/8 tsp hot sauce

    1/8 tsp ground celery seed (optional)

    1/2 tsp paprika (optional)

    Garnishes:  fresh dill sprigs, coarsely ground pepper

     

    1.  Preheat oven to 350 degrees.  Place potatoes in a small bowl, and drizzle with oil.  Sprinkle with 1 tsp kosher salt; toss to coat.  Place on a baking sheet.

    2.  Bake at 350 degrees for 40 to 45 minutes or until tender.  Remove from oven, and let cool 15 minutes.

    3.  Cut each potato in half lengthwise.  carefully scoop out potato pulp into a bowl, leaving shells intact. Discard 4 potato shells.  Place remaining shells on baking sheet, and bake 10 more minutes.  Let cool 30 minutes or until completely cooled.

    4.  Add mayo, next 6 ingred, and if desired, celery seed, to potato pulp in a bowl.  Beet at med speed with an electric mixer until blended.  Spoon mixture generously into each potato shell.  Cover and chill 2 hours.  Sprinkle with paptika just before serving, if desired.  Garnish, if desired.

    BARBECUE SCALLOPED POTATOES

     

    3 lg baking potatoes

    1 1/2 tsp salt, divided

    10oz can cream of mushroom soup

    5 oz can evaporated milk

    1/4 cup barbecue sauce

    1/4 tsp onion salt

    2 cups shredded cheddar cheese

    1/8 tsp paprika

     

    Cook potatoes with 1 tsp salt in boiling water for 30 to 40 minutes or just until tender.  Let cool slightly; peel and slice.  Set aside.  Stir together remaining 1/2 tsp salt, soup, milk, BBQ sauce, and onion salt until well blended.  Layer half each of potato slices, barbecue sauce mixture, and cheese in a lightly greased 2 quart round baking dish.  Repeat layers; sprinkle top evenly with paprika.  Bake at 350 degrees for 45 minutes or until golden.

    GARLIC DILL NEW POTATOES

     

    8 med red potatoes

    3 Tbsp butter, melted

    1 Tbsp chopped fresh dill

    2 tsp minced garlic (about 2 cloves)

    1/4 tsp salt

     

    Cut the potatoes in half, cut the halves in half, then cut the quarters in half so that you have 8 wedges from each potato.  Steam the sliced potatoes on a steamer rach over boiling water in a large covered saucepan for 10 minutes, or until the tip of a knife encounters just a little resistance when stuck into the potatoes.  The potatoes will cook a bit more after they come off the heat, so you want to be sure not to overcook them.  Combine melted butter, dill, garlic and salt in a small bowl.  When the potatoes are cooked, dump them into a medium bowl.  Pour the garlic butter over the potatoes, then gently toss the potatoes until they are well-coated.  Be careful not to toss the potatoes too much or they may fall apart.  4-6 servings.

    Amy, thank you for thinking of me! Potatoes just drive me nutsSadat every meal and we HAVE to have them according to HIM!

    I think the dill potatoes sound excellent and I think we would like the BBQ potatoes...I have all three copied and will start the potato recipe reviews....I swear HE will eat them just about any way but there are nights I just can't choke down one more potato! lol  It isn't that I don't like them, I have just made them too many times in my lifetime! geesh

    I just can't be the only one that feels that way about certain foods, am I?

    And another thing about potatoes is that sometimes they have a mucky taste~and it isn't the whole bag, just every once in a while, the potato just has an awful taste. This has been really bad in our area the past couple years.

    Oh well, on with the potato-thon at our house!  Thanks for thinking of me~what a great Sister gesture to make for meBig Smile

    we couldn't live with out our potatoes!!  My family thinks its a treat when I give them rice because I dont like it.

    Amy, we just find more and more in common.  I don't like rice either.
