    ISO: Chicken Salad Recipe, I am sure I have asked b4

    K, I believe I have asked this before but we ate at Bob Evans tonight and they wouldnt sell my mom the Chicken Salad by the quart (they used to).  Now she is more determined than ever to figure out what is in their chicken salad.

    She knows it has grapes and pecans and the stuff you can see.  She cannot figure out what gives the mayo the flavor or what seasonings they use.  She also cannot tell if it is salad dressing or real mayo. 

    I dont like chicken salad so I have NO clue as to what flavor there is.  If anyone has eaten this and knows a way to imitate it, that would be AWESOME (she drives me NUTS every spring/summer about their chicken salad)

    P.S. I do know that they dont make it in-house so I dont expect a perfect match, just maybe a starting point we can fiddle with.

    Wildfire Chicken Salad     
    Prep time: 5 minutes

    2 cups chopped, cooked chicken
    1/2 cup diced celery
    1/4 cup diced onion
    1/3 cup Bob Evans Wildfire Barbecue Sauce
    1/4 cup mayonnaise

    In a medium bowl, gently stir together all ingredients. Chill.


    Makes 4 servings

    Note: Serve on lettuce leaves, garnish with tomato wedges

     I don't know if this is similiar to what she's looking for or not, but the dressing for this really makes the salad. This is requested so often, and it's a real favorite.  ~Carolyn

     

    CAROLYN'S CHICKEN SALAD SUPREME

    3-4 cups cooked, chopped chicken breast
    1 c. chopped celery
    1 c. halved, white grapes
    ½ c. sliced or slivered almonds (or chopped pecans)
    2 T. chopped parsley
    Place all ingredients in bowl.

    DRESSING:
    ½ c. cream, whipped
    Add: 1 c. mayonnaise
    2 T. lemon juice
    1 T. salt
    Toss gently with chicken mixture. Serve as salad or as sandwich on a croissant.

    Note: This dressing is what makes the salad so special. You may not need all of the dressing because you don’t want the chicken too “wet”. (It's really good for coleslaw). I have made this salad for up to 100 people for luncheons, served on croissants.

    Chicken Salad 

    Ingredients

    • 2 cups chopped, cooked chicken, tossed with bbq sauce until coated
    • handful of lettuce leave mix (iceberg, carrots and red cabbage)
    • 1/4 cup thawed frozen corn
    • 1/4 cup diced red onion or scallions
    • several grape tomatoes
    • cheddar jack cheese
    • fried corn tortillas cut into strips (cut fresh corn tortillas into strips and fry them in vegetable oil till crisp, drain then cool)

    • Dressing:
    • mix 1/2 bbq sauce with 1/2 Marzetti's ranch dressing
    • 1/3 cup Bob Evans Wildfire Barbecue Sauce


    Directions

    1. Assemble your salad as follows:
    2. lettuce, corn, tomatoes, onions, cheese, chicken, tortillas, then top with dressing.

    What is your chicken salad sandwich recipe? Would like one that is like Bob Evans?

    My husband works for Bob Evans I love their chicken salad..........
    2 cups cooked chicken, cut up
    1 1/2 cups of celery, diced
    1/2 cup mayonnaise
    2 T of onion
    salt and pepper to taste
    Combine all ingredients, using enough mayonnaise to moisten.

    I appreciate all your help.  I should have been more specific, its not the Wildfire chicken salad.  This is like a deli chicken salad with no bbq. 

    When I googled this last night I also came across the Yahoo Answers question.  The person that posted that recipe cannot know what goes in the salad because it is not made in house.  They bring it in like potato salad or macaroni salad.  I also worked at Bob Evans and there are very few things that they make from scratch.

    Mom has fooled around with this but there is a specific season that is in it ex. Seasoning Salt or Worshtershire sauce or something like that.  Also it cannot be made with just straight mayo because it has a slight sweetness to it.  It has to be either Miracle Whip or Mayo with sugar.

    Hope this helps clear up my post a little.
