    Rec: Stuffed Squash

    Stuffed Yellow Squash

     

    1 lb ground chuck

    1 1/2 cups chopped onion

    salt and pepper to taste

    1 6 oz can tomato paste

    1 1/2 tbs sugar

    1/4 cup water

    1/4 lb Gruyere cheese, chopped

    6 medium yellow straight neck squash

     

    Brown ground chuck and onion with salt and pepper. Stir in tomato paste, sugar and water. Simmer 10 minutes. Remove from heat and stir in cheese. Cut squash into halves lengthwise; scoop out seeds with a spoon and discard. Place squash halves cut side in in a 9x13  baking dish and sprinkle with salt and pepper. Spoon in meat mixture. Cover pan with foil and bake for 35 minutes at 375 degrees.

    Count me in, sounds great. I wonder if I could use just a little diluted soup instead of tomato paste? Or do you have another suggestion? Thank-you!

    I'm sure anything would be good. I don't care for tomato paste so I use tomato sauce instead. Jill you may be on to something. Cream of mushroom might be good.

    Thanks for your response. Yea, the more I think about it, a soup would be good. Can't wait to try this.

    I'm not nuts about tomato paste either, especially with squash. I think I'd opt for cream of Celery Soup because squash doesn't have a whole lot of its own flavor and is easily overwhelmed. I can't wait to try this. I may go for ground pork too.
