    I couldn't wait for summer to give this a try, it sounded too good. I'm so glad I didn't wait. It tastes like an apple cobbler! Last night I added 1/2 tsp. cinnamon to the oat mixture and some craisins for color. This morning I pulled it from the fridge to warm up a little while I took my shower then I sprinkled the top with chopped walnuts and ground flax and sweetened it with a little stevia, but brown sugar would be great too. It is almost like having dessert for breakfast. What a great treat this is and I give it a 5 spoon rating!

    Another quick and healthly recipe from Andrew Weil,MD Cooking time is actually chilling time.

    6¼ hours | 10 min prep | SERVES 2
    1/2     cup rolled oats
    3/4     cup unsweetened applesauce
    1     small apple, cored and diced
    1/2     cup soymilk
        dried fruit, chopped nuts, ground flaxseed (optional)
        honey (optional) or maple syrup (optional)

       1. Mix first 4 ingredients together in bowl and chill overnight. (If you like the dried fruits and nuts to be softer, add them also, at night.).
       2. Before serving, sprinkle with condiments.
       3. Taste before using the sweetener as it may be sweet enough for you.

    How did this get missed?   Thank you so much for the R&R, chefly   :)    Sounds like a great recipe to pack for camping!
