    And my veggie garden.

    From the left side I have 2 rows of onions, one yellow Spanish and one red. Then 2 rows of carrots, 2 rows of beets, the zucchinni patch, 2 rows of bush beans, the 2 trellises have pole beans. 3 rows of different lettuce, romine, leaf and then a lettuce mix. And then the dill patch. I also have tomatoes for the containers and all my peppers!

    I thnk your gardens will be great. what is the box thing in the back?  You have a lot of open space behind you.

    Hey Amy,

     

    That black box is my composter! I am slowing making compost in my little small yard. It is so much easier on the farm where there is endless space.

     

    That is a farmers field across the highways. Hard to see but there is a twinned highway out my backyard. It is very quiet though. They are saying in the furutre that the town will move to the other side of the highway just for expansion. But I think the boom has slowed down some so that might take a few years to happen.

    We were just discussing what he seeded that field in. The first year we were her he seeded Canola, which when it flowers is a sea of yellow. I have a feeling that is what he is planting this year, which looks great but I noticed a lot of wasps and bees that summer.

     

    As for living in town, I am so glad we look at a field and not someones backyard!

    Beet Leaf Holubtsi
    2 cups of water
    1 cup of rice (Minute Rice)
    1 tsp of salt
    1 small onion (chopped)
    1/2 cup of butter
    2-3 tsps of dill
    pepper
    fresh young beet leaves

    Dill sauce
    1 cup of cream
    1/2 tsp of dill
    1 tbsp of onion
    1/2 tsp of sugar
    1-2 tsps of flour

    For the sauce simmer the 1 tbsp of onion, cream, dill, sugar and flour in a saucepan for 10 minutes, set aside.

    In a small sauce bring water and salt to a boil, add rice cover and remove from heat. Fry the onion in the butter until the onions are transparent, add the dill and add this mixture to the rice. Add a few dashes off pepper and mix well. Set aside. Wash the beet leaves and wilt them in a low oven for a few minutes. Place a tablespoon of rice on the beet leaf, fold sides over filling and roll up. Place in layers in a buttered casserole. Pour the dill sauce over the Holubtsi and cover and bake at 300*F for 1/2-3/4 of an hour.

    Borsch (Beet Soup)

    2-3 beets (cut into thin strips)
    1 medium onion (chopped)
    1/2 cup of carrots (cut into strips)
    1 large potato (cut into small cubes)
    1/2 cup of green beans (cut into chunks)
    1 tsp of dill weed
    1 tsp of parsley (chopped fine)
    2 cups of cabbage (shredded)
    9 cups of water
    2 tbsps of lemon juice
    1 1/2 tsp of salt
    sour cream to garnish

    Cover the beets and carrots with water, add lemon juice & salt & simmer for 30 mins. Add the reat of the vegetables and cook for another 30 mins. Garnish each bowl with a dollop of sour cream!

    Redawna You sure have been busy! It is looking really good. We were rooting for Amanda too. We were kinda surprised at the outcome.

    Tonight everyone had something different. Living in my house of the world pickest eaters gets so aggrivating sometimes. However for me I had Hamburger steak with sauteed mushrooms and onions with brown gravy and rice. DH had Taco Chicken, oldest DS had mac n' cheese, and youngest ate a pancake. I don't know who I can blame because they are my kids......

    Stuffed Cherry Tomatoes

    36 cherry tomatoes

    1 pkg cream cheese, softened

    1 tbsp Zesty Italian dry mix

    2 tbsp milk

    3 tbsp fresh chopped parsley

    Cut off 1/8 inch top of each tomato. Carefully scoop out a small amount of the tomato. Combine cream cheese, dressing mix and milk. Mix well. Fill each tomato with 1 teaspoon of the cream cheese mixture and sprinkle tops with chopped parsley. Refrigerate for up to 6 hours before serving.

    Evening all,

     

    Michelle, try to not get to frustrated, I know it can be tough when everyone likes different things.

    Well we now have 10 tons/22,000 pounds of gravel in our driveway!! It is a small mountain.

    We have already filled up the back around the garden. Tomorrow I have to lay a few hundred feet of landscape fabric around the garage and the north side of the house. I am going to be beat by the end of day tomorrow. I have a nice chunk of pork loin going into the crock pot first thing and it can cook all day, we'll have shedded BBQ pork on buns and salad.

     

    I will post a few more pictures after I get some work done in the morning.

     Morning from California!  83º and sunny today, love it!  DS#1 had his lab final at college last night, don't know how he did yet, I was already in bed when he got home.  He made a friend in class and they have been working on the labs together, so I hope he did well.  (Andrew doens't make friends easily, he's ultra-shy.  So I think it's cute that he found a friend)  Also, his boss at work called last night to change his schedule and told me how much they enjoy having Andrew work there (Big Lots) and what a fine young man he is.  *blush*

     DS#2 is really getting the hang of driving.  Too bad gas is so expensive that I can't just take him driving for driving's sake.  He has to wait until I need to go someplace before he can get behind the wheel.  He has a dental appt today, but he's too nervous to drive there.

    Time to take DS#3 (foster son) to school.   Everyone have a super day!

    OK, so last night I'm breading and placing chicken thighs (not my fave piece, but DH bought them) and getting them ready to bake. I have about half of them done when DH comes in and says he wants to do the rest of them. Fine by me! Here is what he coated them with: flour, salt, pepper, (sounds good so far...) lemon pepper (still, not too bad) and sloppy Joe mix!! He proudly fried the chicken and thought it was great. Rarely do I spit things out, but I was tempted! It was truly awful. Icky.gif

    Good Morning everyone,

     

    This is what 10 tons/ 22,000 pounds of gravel looks like!

     

     

    I am going to be moving that gravel today, just so soon as I do all the landscape fabric placement, in the gusting wind............................so yeah, not sure how that will go!? But I will see what I can do, with the gravel weighting what it does we do not want it sitting to long on the driveway.

     

    Belinda, I keep that man out of the kitchen!!!!!!! My DH over garlics everything, I don't let him do to much in my kitchen any more.

    Well I guess I better go out in the wind........................................ I hate the wind.
