Crispy Pasta Cake with Red Pepper and Mozzarella Salad

    Crispy Pasta Cake with Red Pepper and Mozzarella Salad

    What a neat recipe I can't wait to try it~   Janie

     

    Crispy Pasta Cake with Red Pepper and Mozzarella Salad

     

    Salt for the pasta water

     

    1 pound of angel hair pasta

     

    1 tsp plus 1/4 cup olive oil

     

    Oven set at 200

     

    Boil the pasta in salted water for 2 minutes less then package says.  Drain and pour cool water over the top.  Drain well and toss with 1 tsp of the olive oil.

     

     In a non stick saute pan heat 1/4 cup of olive oil and add 1/4 of the pasta. Spread evenly in the pan.  Turn down the heat to medium and brown on the bottom. Turn over and brown on the other side of the pasta cake.  Continue with the other 3 batches adding more oil as needed.  Tent to keep warm.

     

     

    Prepare the Red Pepper and Mozzarella Salad

     

    Ingredients

     

    9 cups of packed baby spinach

     

    8 cups of mixed young green lettuces

     

    3/4 cup roasted red peppers, cut into bite sized pieces

     

    1-1/2 cups of fresh mozzarella cheese( 1/2' dice)

     

    about a 1/2 cup of your favorite salad dressing

     

     

    To serve 

     

    Divide up the crtispy pasta among 4 salad plates. Mix all of the salad ingredients, toss well and Place on top of the pasta cakes

    Janie, I love the idea of that Pasta Cake!   I wonder if I could top it with some sauce and cheese and make it "pizzalike" for Jake.    I'm a little confused as to why there's an oven temp, it looks like it's all being done on top of the stove?

    Gm ~ Jolene~  Isn't this a neat little recipe~  I am going to get to it sometime this week and yes to the sauce ~  The oven temp is to keep the cooked cakes warm while you assemble the salad part~  Guess you could do the salad part first  and eliminate that part of the recipe??  Janie~  lol??  Coffee

    Gotcha  :)  I'm a little slow this morning   LOL     I'm betting I could make them up, spread a teeny bit of sauce on them, sprinkle it with cheese and then toss it under the broiler for a few mins and Jake would just eat it up.     :)
