    Star [*] What's cookin in your world this sunny Tuesday??

    It's a little early but I need inspiration!  I had this nice peaceful day planned and so far I've had nothing but interuptions! LOL.

    Whatcha got cookin?

     well it's not sunny here today.....interesting weather to say the least for mid May....snowing up in Flagstaff...and we just have a squall go thru.....rain and wind.....KINDA NICE....it's only 67 right now too....

     

    husband cooks on tuesdays....so tonight it will be:

     

    grilled tenderloins

    baked potatoes

    grilled zuchinni....

     

    our soninlaw works for a meat company and he gets the best beef...these are the last of the tenderloins....but ribeyes are coming next....

    Well, it was suppose to be wet and dreary all day, but now the sun is popping thru the clouds a bit.  Might make sweet and sour meatballs, unless I can come up with somthing better, I am going thru a food cooking challeng lately, just have no idea what to cook these days.

     

    Shelley, are you in Flagstaff?  I like Flagstaff, spent some time down there at the University, lovely place!

    Shelly - It's Sunny & 61º here today.  What a nice beef connection to have!  I love steak, but DH would rather eat a burger.

    Char - I just love your siggy - mind if I steal it?  I'm having a food challenge myself these days, nothing sounds good.

    Right now I'm leaning toward a big chef's salad with half the fridge thrown in--some roast pork, some bread, olives, cheese, frozen peas...

    And if it's cooled down by dinner time, maybe a cup of tomato soup on the side.

     Sue, thanks for starting this. It is a humid, overcast day here in the Fort Worth area with severe storms predicted for late tonight. (Ugh!) 

    I have a roast in the crockpot. I'm trying out a new recipe that I found in my TOH cookbook. It is an Italian roast. I'm thinking of having some angel hair spaghetti with it and a salad.

    Hi everyone,

    Looks like it is going to be very nice today so we are going to get some things done in the garden, later this week it is supposed to really warm up!

    Tonight we are having...

    Shrimp stir-fry

    Rice

    Salad

    Just took some tilapia out of the freezer, not sure how I want to fix it. Any good ideas? Maybe bake it in the oven.

    I don't know if anyone saw this in yesterday's post because I posted it late in the day. Patty called me yesterday from Virginia. She just wanted me to relay to everyone that they were doing fine. They travelled thru some rain, but nothing severe.  

    DH is working late tonight. I think DS and I will be either going out, or I'll fix a frozen pizza that was given to us by our favorite pizzeria. DH works on their computer system, so they serve us free when we eat there, and always send some of their pizzas home for us to freeze. They pay DH too!

    These were in a magazine, some looked really yummy!  DD tried the crispy breaded one last night & said it was really good.

    Hi Sue, It must be Italian Beef Day, I have Italian Beef in the slow cooker...got it ready last night and plugged it in this morning! I knew I may not feel like fixing dinner today and this does the work..DD will put it together at dinner time for me if I want!

    49 and rain today and calling for upper 80's to 90's tomorrow!! winter to summer overnight! This has been a  very LATE spring in coming this year!

    I am glad Patty is having a nice trip!!

    Here is the recipe Iam using tonight!

    Italian Beef Sandwiches

    Quick Cooking

    My mother-in-law often served these flavorful sandwiches after church when we'd visit. Because there's little prep work, I make them on busy weeknights alongside french fries and raw veggies. Our children get excited when they smell the beef simmering in the slow cooker. -Jan Kent Knoxville, Tennessee

    SERVINGS: 10

    CATEGORY: Main Dish

    METHOD:

    TIME: Prep: 10 min. Cook: 7-1/2 hours

    Ingredients:

    • 1 beef tip sirloin roast (4-1/2 pounds), cut in half
    • 1 can (14-1/2 ounces) beef broth
    • 1 can (12 ounces) beer or additional beef broth
    • 1 cup water
    • 1/4 cup cider vinegar
    • 1 envelope onion soup mix
    • 1 envelope Italian salad dressing mix
    • 1 garlic clove, minced
    • 1-1/2 teaspoons dried oregano
    • 1 teaspoon dried basil
    • 10 Italian sandwich rolls (6 inches), split

    Directions:

    Place roast in a 5-qt. slow cooker. Combine the broth, beer or additional broth, water, vinegar, soup mix, salad dressing mix, garlic, oregano and basil; pour over roast. Cover and cook on low for 7-8 hours or until meat is tender.
        Remove roast. When cool enough to handle, shred meat, using two forks. Return to slow cooker and heat through. Using a slotted spoon, spoon shredded meat onto each roll. Serve juices as a dipping sauce. Yield: 10 servings.

    We are finally having a nice sunny day here again.  Tomorrow is supposed to be rainy again.  I did some work outside today, taking advantage of the sunshine.

     

    Tonight we are having some type of pasta with shrimp.  I made some jello with fruit this morning so that is dessert.

     

    Hope you all enjoy the rest of your day and the evening too.

    Hello everyone! :)

     

    For lunch we had leftover BBQ pork from Mother's day with mashed potatos, for supper I am picking dh up for his break and we will grab something somewhere.....I am kinda leaning towards seafood, but we'll see...
