    Daily Low Carb Chat ~ 4/16

    Good morning everyone ~

     

    Holy Cow!  Where is April going?  I can't believe we're halfway through the month already.  Not a very pretty day here today.  It's chilly (52) & cloudy, no rain though, at least not yet.  Unlike you Linda, we could use some rain.  It's been very dry!  I got all my tomatoes & flowers in that I had gotten the other day.  Then I went down to the hardware store & picked up a couple of bags of peat moss & a few more marigolds.  This morning when I got into work, I looked in the back of my car & guess what I forgot to take out yesterday... yep!  the marigolds.  LOL  So I'll be planting those this afternoon if it doesn't rain.  I've got to pick up Casey & take him to the dentist at 2:30.  He needs to get his braces tightened. 

     

    Hey, Doris, nice to hear from you yesterday & thanks for the tip.  How much Splenda would you recommend?  I was thinking of making that cheesecake over the weekend.  Our gasoline here is $3.85.  That's for this morning when I passed by the station anyway!  How's the weather over your way?

     

    I've got a new cookie recipe that I'm going to stir up either today or tomorrow.  The dough needs to chill, so I won't be able to bake it until after its been refrigerated overnight.  You know, this time of the year, it seems there's way too much to do & not enough time to do it in!

    Good Morning Barb and All,

     

    Gas here jumped up to $3.83 after the price went down 2 cents on the market.  If it keeps going up we will have to change our ways as DH likes to run downtown everyday and it is 5 miles each way.

     

    Are you planning on eating some of those cookies Barb? You know Dava will come after you with her wet noodle.Wink You have a fun weekend get your planting done and then come on over and do some for me would ya please please please.

     

    Tomorrow is rummage day in the little town we use to live in and walking tacos that DD does every year for her youth group it's their big money maker and let me not forget the Hmong egg rolls. Shhh don't tell Dava. DD and DSIL are coming up from Fall River and bringing dinner DSIL is doing the cooking for the family. We will meet DGD's boyfriend for the first time too.

     

    I'm not sure if this is M's salad and dressing or not but you might want to give it a try.

     

    Strawberry Salad

    1 bunch romaine- chopped
    3/4 cup sliced fresh strawberries
    1/2 medium Vidalia onion, thinly sliced
    1/2 cup chopped walnuts
    Dressing:
    1 1/2 cup Splenda ( the powdery kind)
    1/3 cup lemon juice
    1 tsp. celery seed
    1 tsp. dry mustard
    1 tsp. paprika ( sweet, not hot)
    1/2 tsp salt
    3/4 cup oil- not olive oil

    Toss romaine, berries, onion and walnuts. In separate bowl mix Splenda, lemon juice, celery seed,mustard,paprika and salt. Slowly whisk in the oil. Put the dressing on the salad 10-15 minutes before you serve it. This will make extra dressing, so save it!

     

    Well I just talked to Jenny and she had a little story to tell me about last night. Haakon was playing with the phone pressing numbers and he actually dialed 911 and pressed talk as well. Jenny saw that the talk was on but didn't know what  so she hung up and the phone rang in a minute and Eric was saying we have this 11 month old that was playing, had to give his name and address they thought that was the end of it. She no sooner laid Haakon down for the night when the sherriff arrived, dog was barking, baby was crying then and Jen looked a wreck after walking Haak. He didn't come in but kept asking her if everything was alright. If you were greeted by Sam (Jen explained he was a nice dog just loud and big) at the door when he is in protect mode you wouldn't want to go in either. He could see that all was calm I guess so he left and Jen said Eric was in the hall asking what was going on he had just come from the shower (hearing the dog) had nothing but a small towel around him. I guess he was lucky it was Jenny that went to the door first. He might have gotten arrested as a pervert dressed like that.Embarrassed I think all phones will be kept out of Haaks hands from now on.

    OK...someone help me here...I'm thinking it's the middle of May...where has April gone? Yikes! Surprise

    Out early today -it's my school reunion weekend, so I've been busy. Our luncheon is tomorrow, and today the 50th reunion class had a special lunch. I was class of '65, so I have a few years yet...! Smile

     

    What a story about Haak...it was scary, but should also be reassuring that someone was there at the other end!  There have been such sad stories about the people not taking it seriously enough ( very rare, I know...but so sad when it happens!)

    Just home for a quick break...back over to school for more festivities...then out to dinner with DH tonight.

    Thanks for posting my strawberry recipe...that dressing is so good!

    That sure made it easy to find you today!  yea!

    I had a coffee here this morning, for a lady here from Florida...I worked with her years ago, and she is just back in IA for a graduation.  I had enough carbs for a week!  I made a Cinnabon coffee cake mix, and she brought cookies.  I felt like I had to eat, or they would think there was something wrong with what I was serving!

    Lovely day here!  I enjoy the recipes.

     Good afternoon girls,

    I've been running around with two friends of mine this morning and my Mom is coming down this afternoon so I'm really busy......but wanted to ask, does anyone have a good recipe for a cold macaroni salad made with mayo?  I'm taking it to a cover dish party Saturday. I'll check back in later this evening.

    Hi- in between stops again...

     

    Waving to naughty cookie eating alphy! Watch out...Dava will come after you with a wet noodle! Glad you had fun!

     

    Linda: I make my mac salad with onions,  bell peppers, black olives, all finely chopped, salt and pepper and  cooked Dreamfields macaroni...mix well, and add mayo to bind. Before I serve it, I add more mayo, as it usually has all be absorbed by the mac. It is simple and so good!

    I make my mac salad very similar to that...haven't done it for years, I guess....but I also add a lot of Lawrey's to it.  I hesitated to post, so many people like the macaroni salad with Borden's Eagle Brand....I can't stand it, way too sweet for me!  but to each his own, eh?

    Hi again,

     

    Jenny and the boys are here until tomorrow evening so I probably won't get back until everyone goes home.

     

    Linda, I mix sour cream with the mayo and a little vinegar and splenda to taste.

     

    Alphy, I have been meaning to tell you I checked my Wal Mart and we have Breyers L/C ice cream as well as sugar free Blue Bunny.

     

    Jenny went to see my other DD's newest niece born early this morning. Lydia May came into the world minutes after mommy got to the hospital and is doing pretty well. The nurse did the delivery since the doctor didn't make it on time. I will see her in June so I will get a new baby fix then.

    I used one cup of the Splenda, the kind that comes in that big bag, lol.  And still use the honey too!!!  Otherwise it's too bland for our taste.   But company ate it and we didn't mention the Splenda, no one said anything bad about it at all.   I have made cranberry scones with that Sugar Twin brown sugar that comes in a box, and used whole wheat flour and oatmeal, and no one said anything either, or noticed.   My dh became very diabetic after the liver transplant, it turns out that everyone that has this "becomes" diabetic afterwards, a little side affect.

     

    I too was thinking of Dava's "wet noodle", in fact, even when I wasn't coming here for months, whenever I "over ate" or "over served" I would think of Dava's wet noodle coming after me.   lol
