    Big Smile [:D] Real, Homemade Vanilla Icecream...No Fancy-Dancy Equipment Needed! Enjoy!

    I shared this on the Whatcha Cookin' thread but figured not everyone reads that.  Since so many of y'all are in HOT Weather already...I hope you'll give this a try.  It truly is worth every calorie and fat gram! Enjoy!

    Vanilla IceCream

    1/2 cup cold milk

    1 tablespoon vanilla extract

    1 14-oz can Sweetened Condensed Milk

    Dash of salt

    2 cups Heavy (Whipping) Cream

    Stir Milk, Vanilla, Condensed Milk and salt in a medium bowl.  Beat Heavy Cream in a large bowl with an electric mixer until stiff peaks form when beaters are lifted.  Gently fold in Milk mixture.  Pour into shallow 1 and 1/2 quart metal bowl or pan.  Cover and freeze at least 4 hours, stirring once after 2 hours when edges start to harden.  Serve or spoon into an air-tight container and freeze for up to 1 week.

    Just a tip--you can make pretty much any ice cream recipe without an ice cream freezer, as long as you beat it every 4 hours or so, as it freezes--that breaks down the ice crystals and whips air into it.  I've done the 'exchange' both ways.  Made ice cream freezer recipes in the freezer of my fridge and adapted the freezer recipes to use in an ice cream freezer.  Always worked for me.

    I am intrigued by the sweetened condensed milk in this recipe.  I can see how it would act as a thickening agent as well as sweetening, and so would replace the eggs used in most homemeade icecreams or the carageenan used in most commercially made icecream bases.  I think I'll print this out and clip it to the inside cover of one of my icecream recipe books.

    Of course the recipe gets even easier during the winter. Add the sweetened condensed milk to snow and Waalaa!
