    Good Morning all. Nothing much to report here. Rained a little last night. Yesterday I got a bit more unpacked.

    My cousin gets married today. I won't make it to the wedding but am suppose to go to the reception at 5:30pm. I'd rather stay home and snooze but I promised a while ago I'd be there. Sigh....

    Well, that's about it - pretty sad isn't it??? LOL I guess it's better than being ill or something.

    I have something to report..........Coffee  THE COFFEE IS READY, MICHELLE!!!!!!  Coffee I am sure by now you could use a cup or two, maybe even three!! LOL We have had rain here too like all day yesterday and possibly today.  I am kinda ready for the big warm up and shorts weather, but I will gladly take the milder weather any day.   You must be exhausted from working nights for so long, moving and tring to get everything accomplished. I hope you can get some good rest today.

     

    Doris, I was surprized when the pharmacy took back the prefilled loveastat too.  Ron has to watch the extreme weather like cold and too warm, like I am sure your DH does too.  I worry too, about them over doing.  So far with all the work we have been doing around the house, Ron seems to be doing okay now.  I am knocking on wood here.   I think since we decided a trip somewhere right now was too much, our nerves calmed down and we were greatly relieved.

     

    Today is our Walmart hair do day.  I think our area has that 100 mile yard sale thing today. It is raining so I don't know if we will waste the gas driving around looking at yard sales. I will have to type out the recipe for the buttermilk breakfast cakes for you.  It is not a diabetic recipe, but it sure is a good recipe and makes 3-5 nice size cakes.  It was a recipe my Aunt used alot and I got the recipe from her.  I used the real butter in it too.......yum!!!

     

    Hey, I just thought of something!!  MIchelle want a piece of Buttermilk Breakfast Cake along with your coffee??? Anyone????  I am a bad influence this morning!! LOL

    Oh Mary, you wicked, wicked little monkey you!! LOL. I'd LOVE a piece with my 3 cups of coffee I'll be "sharing" with you. Have fun at WM. The early dawn looks fairly clear, some clouds but not bad. Not bad at all. Well, thanks for the coffee. I'll be back tonite. Have a wonderful day my friend!

    Rhubarb and Strawberry Pie (Diabetic)

    Since summer is almost here and it is time for strawberry and rhubarb, I wanted to send this recipe in. It is a Diabetic recipe and I know you do not get a lot of these and they are just as good made this way. Or you can make it like you normally would.

    Ingredients

    • 3 cups, cut in 1 inch pieces (or 1 pkg frozen unsweetened rhubarb, thawed and undrained)
    • 3/4 cup water
    • 1/4 cup flour
    • 3 Tbsp. cornstarch
    • 2 Tbsp. Lemon juice
    • 3 cups sliced strawberries
    • 12 1/2 tsp. Equal Measure or 40 packets Equal sweetener or 1 2/3 cups Equal spoonful
    • 1/4 tsp. ground nutmeg

    Directions

    Use favorite recipe for pie crust for a 9 inch crust. Bake in pre heated oven as required by your recipe. Cool on wire rack.

    For the whole pie to be baked, oven should be set at 350 degrees F. Add rhubarb into a large covered saucepan over medium heat until rhubarb releases liquid (about 5 minutes). Combine water, flour, cornstarch and lemon juice. Stir into rhubarb and heat to boiling. Reduce heat and simmer uncovered, stirring constantly until mixture is thickened and rhubarb is almost tender (3-5 minutes longer). Stir in strawberries and cook 2-3 minutes longer. Stir Equal and nutmeg into fruit mix.

    Spoon into pie crust, spreading evenly. Bake in oven until bubbly about 40 minutes. Cover edge of crust with aluminum foil if browning too quickly. Cool on wire rack, serve warm. Enjoy!

    Good morning, everyone.

     

    Looks like a nice day to be in the yard. I have a couple of indoor plants to repot and I want to put my pointsettia outside, now.

     

    MICHELE, it's not so bad having a laid back day. I hope you get to the reception, it's fun to see relatives and friends.

     

    MARY, have a smooth trip to WM. The rummage sale sounds interesting, nothing like that around here. Sometimes one street will get together or a subdivision. But, not everyone participates.

     

    DORIS, I guess we all worry about our DHs doing too much. I keep my eye on Russell, too. I know we want it to get warmer, but hot is too much.

     

    I love the flowers I got at Aldi's, I may go back for a couple more. One pot I took apart and planted the geraniums in my front planter. It was cheaper than buying big, individual plants. BBL

    Nancy – You are so sweet to keep us all in your prayers.  Thank you so much.  {{{Nancy}}}  Our temps have been below normal lately, too.  I’m ready for some warmer weather, but I’m sure it will be here in time and then I will complain because it is too hot.  I hope you get your yard work done.  It will look so pretty.

    Mary – Thank you also for your prayers.  I appreciate it.  I don’t know how much the blood thinner is, but they did say it is very expensive.  But the insurance will cover the full price.  Thank goodness for that.  I’m going to be on Lovenox.  I’m sure they are all pretty much the same.  How nice that you don’t have any doctor appointments coming up.  Enjoy it!  I’m so glad that Ron seems to be doing so well now.

    Doris – They showed us a video on how to give ourselves the shot and there is a DVD in the box for us.  She also told us that CVS will take the syringes, so I’m assuming they’ll also take the leftover medication.  I will ask.  Yes, I did meet a couple of the other patients.  One lady that sat in front of me is having her surgery the day before me, so I'm guessing we will see each other in the hospital and we decided we will be walking buddies.  So that will be nice.  I can’t get over how active your DH is.  I’m guessing he knows what his limits are and stops when he reaches that point.  You have the worst time with prescriptions and appointments!  How frustrating.

    Michele – Have a good time at the wedding reception.  I’m sure you would rather go home and sleep, but the couple will appreciate you being there to help them celebrate.  Thank you for the recipe.  It looks very good.

    I’m working today and we’ve been busy non-stop until now.  The one that has kept us the busiest has left for the day.  There is one attorney that is notorious for bringing work up later in the afternoon and we end up having to stay over.  He is in here now, so I’m hoping he will leave early, too.

    We have a family dinner later for my oldest sister’s birthday.  Her birthday isn’t until the 26th, but that is the weekend of the Indy 500 and it is just crazy trying to get everybody together plus trying to find a restaurant that isn’t super-crowded. So we are celebrating today.  We are going to TGIFriday’s.  I’ll probably have the pecan-crusted salmon, which is what I usually get.

    I can not believe I am on this board so early in the morning, I am not on the board till the pm, busy day ahead off to the dreaded Kelowna to do some shopping, home and hopefully my son

    will have arived from Calgary safe and sound.

    Hot here to day again will be nice maybe a bbq to night.

    Pass the Breakfast Cake please....   I'll have a slice....   It is made with splenda isn't it?  

     

    Oooohhh  and rhubarb pie...   yum!  I was standing at my kitchen window last night and saw that our rhubarb is growing.  Finally.   With all our cold weather and snow yet last week, it's been slow.  I can probably have some later this week.   And we just froze some strawberries last weekend.  so I'm set!

    Michelle, I know I could never keep up with you!  Your list of accomplishments wears me out.  Have fun at the wedding.... you deserve a break.

     

    Nancy, that was a smart move - splitting up the potted plants into your flower beds.  We're not yet planting as it's been to cold, but I'm sure the Walmarts and nurseries will be busy busy today.

     

    Doris, I'm surprised too that they took back the meds.  Here the restaurants won't even take back those packages of ketchup or butter - they have to hit the garbage, yet by you they take back unused medications.  WOW

     

    It was 82 yesterday afternoon, predicted for 85 today.  I'm already ready for cooler weather -   LOL   I know  please don't beat me over the head ladies - it's just the hot weather drains my energy so fast!  At least when it's cold, I like to move and keep moving.   LOL

     

    I can't report on the BD cake... as I don't know what she'll make yet.  We know it's not chocolate as dad doesn't like that... so we're thinking hazelnut vanilla.  We're decorating with a theme of toys and games so Heather is going to thing of how she can weave that into cake... we've talked of creating it like a train... or a chess board... but ultimately, she'll decide as to what she can make.  In two weeks from today, she'll be in my kitchen making it, so she still has time.

     

    Well, I hear Rebecca.  I told her I'd make breakfast so I better get busy.  We want to spend the day working in th back yard so the sooner I feed her, the sooner we'll get going.  LOL

    oohh... Alice.  I feel for you.   I always tried to avoid Kelowna in the summer as I hated the heat.  But it does make for nice evenings.  Enjoy your BBQ.

    Hi everyone.

     

    Sorry I've been MIA.  I've felt absolutely awful this week.  This cold is not what I need right now.  I've spent 2 nights sleeping in the recliner.  When I lay in bed I cough and cough.  It's a really deep raspy cough and I'm tired of it!!!

     

    And adding to the tiredness is this dog gone site.  I just get really ticked when I key in a post and it goes to never, never land.  LOL!!  Guess it's my day to whine and complain.

     

    Patti & I went to the bridal shop Wednesday for our first fittings.  The poor seamstress has to add 2" to the wideth of the sleeves on my jacket.  She was concerned about getting fabric to fix the sleeves.  I said shorten the skirt.  It was tea length which I didn't really like but Patti did.  It will now be just under my knees which is what I wanted in the first place.

     

    I've got coffee hour tomorrow so I'll be whipping up some things later.  I'm making Dowie's rhubarb custard bars, a borsin (sp?) cheese, and a hummus.  I'm getting off easy tomorrow.  The ladies of the church are having a surprise shower for Patti & Jimmie.  They are going to provide a cake.  Thank God I don't have more to do.  I make those rhubarb bars diabetic friendly by using half white/half white whole wheat flour, Splenda, and low fat cream cheese.  I love those bars so I can have some and not feel awful about them.

     

    Well I guess I should get into the kitchen.  The rhubarb is soaking in water to get the dirt off.

     

    Hopefully I'll talk to all of you later.  That is if I don't have to fight this web site.

    Hi Everyone,

      We just had a storm and now its partly sunny.  Still on the cool side.  Anxious to dig out the shorts!!

     

       Carol, those Dowie's rhubarb custard bars, sound so good!! Could you post a recipe if you have time???  My rhubarb is ready to cut again and I am thinking of making something sugar free.  I hope you are feeling better.

     

       Joyce, the girl on Guiding Light had lap band surgury not gastric bypass.  They said she would lose a pound or two a week and I guess she already lost quite abit as the surgury was done about 2 months ago and they are working it into the story line of  Guilding Light.   She is such a pretty young girl.  Glad to hear the Lovenox is covered by your insurance.  Our insurance covered most of it, but not the whole thing.  Hope you had a good time at dinner!!

     

      We did the Walmart thing and then went for a short ride.  I am going to a new dentist Friday and wasn't sure where his office is located....well, his office is in yard sale alley!! LOL  I know I will be doing detour after detour Friday!!! LOL

     

      Nancy, I am hanging back with the flowers since it is still cool here.  But I see so many pretty ones and can not wait to go to the Greenhouse.

    Mary here's the recipe for the rhubarb custard bars.  One of the men at church just waits for me to bring these bars every year.  I usually send the leftovers home with him and his DW.

    My rhubarb is almost ready!! I'm excited!! One of the first things I make every year are the Rhubarb Custard Bars. I got the recipe from the Apr/May 98 TOH. They are so delicious!! I'm always looking for more rhubarb recipes. Please share your favorite recipes!!

    RHUBARB CUSTARD BARS

    crust:
    2 cups flour
    1/4 cup sugar
    1 cup butter or margarine

    filling:
    2 cups sugar
    1/2 cup flour
    1 cup cream or milk
    3 eggs
    5 cups cut up rhubarb

    topping:
    8 oz cream cheese
    1/2 cup sugar
    2 cups Cool Whip

    Mix flour and sugar. Cut in butter. Press into a 10x15 or 9x13 greased pan. Bake at 350° for 10 minutes.

    Combine sugar and flour. Whisk in cream and eggs. Stir in rhubarb. Pour over crust. Bake 40-45 minutes or until filling is set. Cool.

    Beat cream cheese and sugar until well mixed. Fold in Cool Whip. Spread over cooled filling. Chill.

    I used to make this with a meringue topping which is also very good, but now I make it with the cream cheese and prefer it this way.

     

    It's hard to believe that Dowie first posted this recipe in 2003.  It's a great recipe.  I made it in the 10x15 pan today.  Goes further that way and the crust isn't as thick.  I hope you like this.

    That's a good recipe, I've tried that before for company.   I use Smart Balence tub margarine for the crust, whole wheat flour and add some oatmeal to that also.  This way the crust is not so bad.   You can also make it without a crust if you want to, cut's out alot of carbs.   Do any of you make quiche without a crust???  Filled with veggies and reduced fat cheese??

     

    It was 97 degrees today, the heat wave should be over with by next week, lol, just when people get to go back to work.

     

    My dh still have 6 Lovonox left in his box, I just checked.   We will just toss it I guess.

     

    Michelle, did you go to that reception or did you change your mind and stay home??

     

    Nancy, do you tell on your husband to the doctor if he asks how he is doing and if he is following doctor's orders???  

     

    I guess I wouldn't go downtown on that long weekend either Joyce.  The locals have trouble just doing their usual thing on a touristy day like that though.   I wonder if the gas prices will keep some of the visitors away this year.??    They said on the news that the casinos up in Reno are missing lots of visitors, and so is Lake Tahoe, plus the gas up there is over $4.00 already for awhile.    Have any of you experienced shortages at the grocery stores due to the high gas prices keeping the trucks slower??

    Getting ready to go to bed. Being outside made me tired, today. And, I will be playing bells at the late service tomorrow.

     

    DORIS, after the stroke I went in with Russell for the doctor's app't. But, I do not go in for the neurosurgeon. He has been pretty good at following directions, but he is not one to sit around. Our food store now has Smart Balance in four sticks like butter comes. Plus, the first week it was advertised it was on sale. So, I bought a couple of pounds and have used it for baking. Works fine.

     

    CAROL, sorry you have been feeling poorly. We have had rhubarb treats for a couple of weeks. I made pie and next week I will make the rhubarb torte with the meringue topping. Our SIL is coming to help Russell take down our old shed and put up a new one.

     

    MARY, happy to hear you will have a new dentist. I do the same thing, scoping out an address before I have to be there. We have nurseries around our area, but I find very nice flowers at the WM in Waukesha.

     

    HAUKE, you and Doris are sure hotter than we are. I am not too jealous though, because when we have those temps, I will probably stay in the AC. Looks like we will all have to wait for the birthday cake surprise.

     

    ALICE, when you mentioned Kelowna, it sounded familiar. When I was in the Secret Sister group, the lady I sent things to lives in Westbank. I had looked up the city and territory on a map.

     

    JOYCE, I was wishing your work load slowed down. But, you could let loose when you had dinner with your family. That's a good time to unwind, chat and relax.

     

    My family can't believe I am going to bed, already. But, my body sure feels like it needs to rest. See you all in the morning.
