    Daily Low Carb Chat Weekend May 17, 18

    Good morning, all.

    Hope you all have great plans for the weekend! I'm off reunioning with friends from high school...it's always such fun!

    We had a great, quick dinner the other night. I have a thing called Fasta Pasta ( from QVC) that makes pasta in the microwave. Really. And the darn things works as promised! I made our penne in there in 16 minutes from start to finish. No big pot of boiling water on the stove to heat up the kitchen, etc...wonderful! You get 2 for about $20...so, I can make my mac salad, pasta salad, etc. ALL SUMMER LONG...yay!

    If I hadn't tried it, I probably wouldn't have believed it, but it's great. I saw a recipe for lasagna rollups...this thing will do lasagna noodles perfectly, so that's what I'll try next. I'll post the recipe later.

    Here's one to try:

    Ground Beef and Spinach Lasagna Rollups Recipe #80791

    I usually triple this recipe for my family cause it is a goody. Freezes well, too.

    1¼ hours | 35 min prep | SERVES 2

    1/2 lb lean ground beef
    1/4 cup chopped onions
    1 (14 ounce) jar commercial pasta sauce
    1 egg, beaten
    3/4 cup ricotta cheese
    2 tablespoons grated parmesan cheese
    2 teaspoons dried oregano
    1 teaspoon dried basil
    1 1/4 cups shredded mozzarella cheese
    4 cooked lasagna noodles
    1 cup fresh baby spinach leaves, washed and stems removed

    1. In a skillet, add the ground beef and onion; cook over medium-high heat until beef is no-longer pink; stir often and crumble beef while cooking; drain well.
    2. Add in 1/2 cup pasta sauce; stir to combine.
    3. Take skillet off of burner.
    4. Spread 3 tablespoons pasta sauce in an ungreased 8-inch square glass baking pan.
    5. In a bowl, add egg, ricotta cheese, Parmesan cheese, oregano, basil, and 3/4 cup mozzarella; stir to mix.
    6. Spread 1/4 of the ricotta mixture, spinach leaves, and beef mixture over each lasagna noodle.
    7. Beginning with the short side, loosely roll each noodle.
    8. Place seam side down in baking dish.
    9. Top rollups with remaining pasta sauce.
    10. Cover with aluminum foil.
    11. Bake at 350° for 30-40 minutes or until bubbly and heated through.
    12. Take off foil; sprinkle with remaining cheese.
    13. Bake 2-4 more minutes or until cheese is melted.
    14. Let rest for 5-10 minutes before serving.

    Hello Margaret, Have fun with your friends today it's always nice to see how everyone is doing.

    Thanks for the recipe and the link.

    The sun is out today but still cool, So I would say perfect weather for me.

    My sis called yesterday and said I might want to think about coming in 3 weeks, She thinks that will be the surgery time.

    I already have my dry cleaning in and picking them up today, My passport and and personal stuff is already in my carry on. Just have to book the flight which I plan on doing today at least get an idea of the prices. Most of the flights have one stop over and they are cheaper but I am not a good flyer so I will have to pay the extra for a straight flight.

    My Dh is so supportive, I am so glad he is in my life. I maybe gone for up to 3 months it just depends how the surgery goes.

    I have every bit of confidence ( must be faith) that you will all do well.

    I hope you can find an easy flight that doesn't cost too much ( are there such things?)

    We are not happy flyers either ( or is it fliers?) Anyway, we are going to Albuquerque this summer and have to go through Baltimore both going and coming home...no non-stop flights from here...Sad

    Morning,

     

    It's a green world here.. and last weekend we were in snow.  I can't believe the difference a week makes.

     

    Actually, yesterday was over 80F  and today it's suppose to be hotter.  I think it will reach 85. 

     

    I know the campers and farmers love it.... but it means nothing and I mean nothing will get done at this house.  We had planned of organizing the back shed, but in that heat, I doubt I'll get DD to leave the basement.  It's only 9:30 and I'm ready for bed as the house is already so hot.

     

    Maybe I'll feel more energetic after some breakfast.   LOL

    Hello friends!  I am definitely on the mend and feeling pretty good.  I'm not going to overdo it though because I'm having so much fun watching DH realize how much stuff he takes for granted around here.  Big Smile

     

    Tomorrow I hope to make a big bowl of tuna salad for myself to use for lunch and snacks.  Love it on celery!

    Hi Margaret, Ann, Hauke and Connie,

     

    The last of my company just left and I am exhausted. Mason wanted to stay over again tonight but DH isn't sure he wants to go out to their house tomorrow so he had to go home. We met Michelle's boyfriend and he seems nice and Colton was very taken with him.

     

    Kirsten and Don brought me a hanging gerainum for mother's day. I'll have to read up on it I think they need full sun, if so I don't know where I'll put it all my hanging spots are in the shade most of the time.  I bought some perennials today at the sales and that was my biggest purchase. I was sorely disappointed not having any great finds, I did get a few books.

     

    Connie I am so glad that you are coming along and feeling pretty good. Let your DH pamper you for as long as he is willing.

     

    Margaret I hope you had a good time at the reunion.

     

    Did you find any reasonable priced flites Ann? Does your sister have a computer so you can stay in touch with us?

     

    Hauke it's hard for me to believe it is so warm there in Canada, we had a little rain and the temp really dropped. I think it was in the 50's when the kids left. Your gonna have to start drinking iced coffee to help you cool off.

     

    I think I'm off to an early bed time tonight and I hope to see you all tomorrow.

    Hello, I'm just checking in.

    It's 97 degrees up here, suddenly, it's summer!!!   Time to dig out the special tall glasses for the diet root beer, fat free, no sugar added vanilla ice cream and make dh and I a nice FLOAT !!!!!  :)

     

    Have a good evening, have a good time if you are out and about, and stay safe on the roads, too many nuts out there!!!

    Hello!

    Well we had a lovely time at reunion yesterday. I saw so many good friends! We had some women there from the class of 1938 - their 70th reunion, and one woman from 1937...her 71st! I do the introductions of the returning classes, so it's always wonderful when I get to introduce those women! The senior class- the class of 2008- is always amazed!

    Off to the theater today- I'll work "house" for the matinee...the last performance of this show " Inherit the Wind". It was a great production...

    Starting to rain a bit- so DH won't be doing more yardwork today...he did a lot yesterday, so that's just fine!

    Waving to you all...send us a touch of that heat, will you?

    Good Morning,

     

    I have been trying to get on here since about 5am and nothing would come up for me.

     

    Margaret that is really something 70 and 71 years how wonderful. I hope the ladies are enjoying good health so they can come back next year if you do this annually. I think DH's 45th reunion is coming up this year but he won't even consider going.Oh well I don't go to mine either since I have not kept in touch with anyone so I never hear anything.

     

    I think I will lay around and rest today.

    Hope everyone is enjoying their Sunday.  DH and I went to the nearby nursery and I pointed out flowers and plants I want for the yard.  DH loaded them up and my mom will be coming to help plant them.  She is very excited to help in some way during my recovery. 

     

    DH continues to pamper me.  Big Smile
