    R&R: Mother's Day Breakfast Cobbler. Mmm Good

     I made this for dessert instead of breakfast and cooked it for about 8 hours. When reading the ingredients it seemed like the cup of water would be too much but I used that amount of liquid anyway and shouldn't have. It was very soupy. I fixed that problem by adding another cup of cereal and letting it cook another 1/2 hour. I also omitted the brown sugar so I could eat it and it was very lightly sweetened, but the ice cream on top (sugar free for me) added the sweetness it needed. I also used part apple juice and part water for additional sweetness and some nutrition. Next time I will use peaches packed in juice and not drain them and omit the water. If sugar isn't an issue in your diet you would like at least 2 Tbsp. brown sugar in it. Now for the review of the flavor. lol! It was delicious! DD and DH both wanted seconds. What isn't to like about sweet hot apples, cinnamon, granola, and peaches! Oh, don't believe the 6 servings you'll only get 4 servings out of this.     Mother's Day Breakfast Cobbler Recipe #227819
    Given that I was out late the day before Mother's Day this year, I knew there was no way I'd be able to get up early enough to bring my mother breakfast in bed, as tradition dictates. So instead, I bought her a new crockpot, and put it in the oven when I got home, filled with this simple breakfast cobbler, so that when she awoke, the house was full of the smell of cooked apples and cinnamon, and she had a hot breakfast waiting for her. It's quite filling, so it'll feed more people than you'd expect. It can be refrigerated and reheated.

    ½ day | 5 min prep | SERVES 4 -6
    4     granny smith apples, cored, peeled, and cut into segments
    1     cup granola cereal (Kashi Go Lean Crunch)
    1/4     cup desiccated coconut (unsweetened, dried, shredded)
    1/4     cup slivered almonds (omitted)
    1/2     cup chopped dates
    410     g peach slices in syrup (15 oz. can, drained*)
    1/4     cup brown sugar (omitted)
    3     tablespoons honey (agave syrup)
    1     cup water (2/3 cup apple juice, 1/3 cup water*)
    (I added 1 tsp. ground cinnamon)

       1. Place all of the ingredients into a small crockpot, and mix well.
       2. Place in an oven, and let it cook overnight at about 70 - 100ºC. (Low)
       3. Serve with thickened cream. (vanilla ice cream)
