    Crustless Quiche

    6 eggs
    1/2 cup of chopped onions
    1 1/2 cups of milk
    1/2 cup of whipping cream
    1 cups of cheese (grated)
    1 cup of fine bread crumbs
    1 can of mushrooms
    1/8 tsp of pepper

    Spray a 9 inch pie plate with Pam. In a large measuring cup mix the eggs, milk, whipping cream, half of the onions, half of the cheese, pepper and breadcrumbs. Stir until throughly combines. Sprinkle the remaining onions and the can of mushrooms onto the bottom of the pie plate. Pour the egg mixture over onions and muchrooms and sprinle the top with the remaining cheese. Bake at 350*F for 30 - 40 minutes or until center is set and the top is golden brown.

    A recipe that you can really play with! Substitute any filling with one of your choice or add what you like ie: cooked bacon or ham!

    Coconut Mandarin Salad

    1 cup of miniature marshmallows
    1 cup of sour cream
    1 can of mandarin oranges (drained)
    1 can of fruit cocktail (drained)
    1 can of pineapple tidbits (drained)
    1 cup of coconut

    Mix all together and refridgerate for minimum of 4 hours before serving

    Redawna, I love brunch! I've got a few recipes I can contribute! Oh, I sent you a PM too with a question. TTYL

     

    Pineapple French Toast Casserole

     

    1 15 oz Can Crushed Pineapple

    ¼ Cup Heavy Cream

    1 tsp Vanilla

    3 eggs - beaten

    3-5  ½ inch slices of Ciabatta Bread

    ½ Stick Butter – melted

    2 Tbsp Cinnamon Sugar

    ½ Cup Heavy Cream

    3 Tbsp Sugar

    Mix thoroughly together the pineapple, cream, vanilla and eggs and pour into a greased 9x9 casserole dish.  Dip bread slices in butter and lay on top of the pineapple mixture. Sprinkle with cinnamon sugar. Bake at 350 for about 40 minutes or until top is a deep golden brown. Remove from oven and let sit for about 5 minutes. While casserole is baking, beat heavy cream, gradually adding sugar, until stiff peaks form.  When serving the casserole, top with a dollop of whipped cream and sprinkle with a bit more of the cinnamon sugar if desired.

    Alternatives:

    Peel, core and slice an apple and add it with the pineapple.

    Try peaches! Just crush them before mixing with the other ingredients.

    If you don’t have, or can’t find ciabatta bread, I’ve used regular white sandwich bread with great success.

    Maple Oat Bread

    1 cup of old fashioned oats
    1 cup of boiling water
    1 pkg of yeast
    1/3 cup of warm water
    1/2 cup of maple syrup
    2 tsp of canola oil
    1 1/2 tsp of salt
    3 1/2 - 4 cups of flour

    Topping:
    1 egg white, lightly beaten
    2 tbsp of oats

    In a blender or food processor, cover and process oats for 6-7 seconds or unitl coarsely chopped. Transfer to a small bowl, add boiling water. Let mixture stand unitl cooled to 110*-115*. In a mixing bowl, dissolve yeast in 1/3 cup warm water, add syrup, oil, salt, oat mixture and 2 cups of flour, beat unitl smooth. Stir in enough remaing flour to form a soft dough. Turn onto a lightly floured surface, knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise ina warm place until doubled, about 1 hour.
    Punch down. Turn onto a lightly floured surface. Shape into a flattened 9 inch round loaf. Place ina greased 9 inch round baking dish. Cover and let rise until doubled, about 45 minutes. Brush with egg white, sprinkle with oats. Bake at 350* for 30 - 35 minutes or unitl golden brown. Remove from pan to cool.

    Bacon Pizza Squares

    6 slices bacon
    1/3 cup green bell pepper, chopped
    1/3 cup onion, chopped
    4 plum tomatoes, seeded and chopped
    1 teaspoon dried basil
    2 tablespoons mayonnaise
    1 clove garlic, crushed
    1 (10 ounce) package refrigerated pizza crust
    3/4 cup shredded Swiss cheese

    Method:
    Preheat oven 375 degrees F (190 degrees C).
    Place bacon in a large skillet over medium heat. Fry bacon until crisp. Drain on paper towels.
    Crumble bacon into a medium-size mixing bowl. Mix in bell pepper, tomatoes, and basil. In a separate small bowl, combine mayonnaise and garlic.
    Roll pizza crust into a 12x15 inch rectangular baking sheet. Spread the mayonnaise mixture evenly over the crust. Sprinkle the bacon mixture over the mayonnaise, and top the entire pizza with cheese.
    Bake 18 to 20 minutes or until the top is bubbly and the crust is golden brown. Cool and cut the pizza into 24 squares.

    SOUTHWEST SAUSAGE BAKE
    (From Barbara Waddel, Taste of Home magazine)
    (A great breakfast casserole)

    6 flour tortillas (10") cut into 1/2" strips
    4 cans (4 oz each) chopped green chilies, drained
    1 lb bulk pork sausage, cooked and drained
    2 cups (8 oz) shredded Monterey Jack cheese (I've used cheddar)
    10 eggs
    1/2 cup milk
    1/2 tsp of each- salt, garlic salt, onion salt, pepper and ground cumin
    Paprika
    2 medium tomatoes, sliced
    Sour cream and salsa

    In a greased 13" x 9" baking dish, layer half of the tortilla strips, chilies, sausage, and cheese. Repeat layers. In a bowl, beat eggs, milk and seasoning; pour over cheese. Sprinkle with paprika. Cover and refrigerate overnight.
    Remove from refrigerator 30 minutes before baking. Bake uncovered at 350 for 50 minutes. Arrange tomato slices over the top. Bake 10 to 15 minutes longer or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting. Serve with sour cream and salsa. Yield: 12 servings.
    Note: Easily cuts in 1/2

    Carlyle House Fried Apples and Bacon

    1 lb. bacon
    4 medium cooking apples, cored, peeled and cubed
    1 T. sugar

    Cook bacon in large skillet. Drain bacon on paper towels. Set aside. Reserve
    1/4 cup drippings in skillet. Put apples in reserved bacon droppings in
    skillet. Sprinkle with sugar. Cover and cook over medium heat for 15 minutes
    or until apples are tender. Uncover and cook another 15 minutes or until
    liquid has evaporated and apples have browned. Remove to warm platter and
    garnish with bacon. Serve at once. Serves 6 to 8

    This is Patty's recipe.

     

    Death by Chocolate Waffles

    1 1/3 C. flour
    1/3 C. whole-wheat flour
    1/4 C. unsweetened cocoa
    1 T. baking powder
    1 t. cinnamon
    1/2 C. butter
    3 oz. semisweet chocolate
    2 T. granulated sugar
    2 1/4 C. whole milk
    2 eggs, beaten until frothy

    Preheat waffle iron.

    In a large bowl, sift together flour, whole-wheat flour, cocoa, baking powder and cinnamon. In a heavy-bottomed saucepan over very low heat, melt butter, chocolate and sugar. Whisk to smooth, remove from heat, then whisk in milk and eggs.

    Make a well in dry ingredients, pour in chocolate mixture and blend just until everything is combined. Let batter stand for several minutes.
    Pour about 1/2 to 3/4 cup batter into very hot waffle iron and bake until waffles are golden and crisp. Serve hot. Makes 4 waffles. (Patty)

    Biscuts and Sausage Gravy

    This has become a Sunday morning tradition at our house.

    Basic Biscuts
    2 cups flour
    4 teaspoons baking powder
    3 teaspoons sugar
    1/2 teaspoon salt
    1/2 cup shortening
    1 egg
    2/3 cup milk
    1 tablespoon honey

    In a bowl,combine flour,baking powder,sugar and salt. Cut in shortening until mixture resembles course crumbs. Combine egg,milk and honey;stir into flour mixture just until combined. Turn onto a floured surface,knead 8-10 times. roll to 1/2 inch thickness. Cut with floured cutter. place 1 inch apart on UNgreased baking sheet. Bake at 425 for 10-12 minutes.

    Sausage Gravy

    1/3-1/2 lb sausage
    1/4 cup butter
    1/4 cup flour
    2 cups milk

    In a medium skillet, brown 1/3-1/2 pound breakfast sausage. Remove to bowl. In same skillet, melt 1/4 cup butter (half stick). Stir in 1/4 cup flour. Stir in 2 cups milk. Gently stir over medium heat until smooth and thickened. Stir in reserved sausage.

    Split biscuts in half on each plate. Spoon gravy over biscuits (Leat)

    Hi all.  Our meeting at church on Saturday went very well (so they tell me).  There was plenty of food and our speaker was wonderful!  I'm actually still a bit tired from all the stress and activity, but there is no rest for the wicked and the righteous don't need it!  Graduation announcements have to go out today, DS#2 needs an emergency dental visit, home schooling DD continues, grocery shopping, and I may have to go to foster son's school to discuss a spot of trouble he's in.  

    The church embarrassed me by singing happy birthday on Sunday during the service.  I was really not expecting that and I looked like a deer caught in the headlights!  DH was sick (he hardly ever gets sick...) so I went out to lunch with a couple of gals from church.  We went to Baker's Square.  Do you have these where you are?  Well, the food isn't very good.  I've only eaten there 3 times and it was bad every time.  But we had fun anyway!  Went shopping but didn't buy anything.  That's OK.  DS#1 gave me a Big Lots gift card (he works there), so I'll find something eventually.

    donut muffins

    1-3/4 cup flour
    1-1/2 tsp baking powder
    1/2 tsp salt
    1/2 tsp nutmeg
    1/4 tsp cinnamon
    1/3 cup oil
    3/4 cup sugar
    1 egg
    3/4 cup milk

    1/2 cup melted butter or margarine
    3/4 cup sugar
    1 tsp cinnamon

    In a bowl combine flour, baking powder, salt, nutmeg and cinnamon. In
    another bowl combine oil, sugar, egg and milk. Add liquid ingredients to
    dry and stir only to combine. Make 12 muffins and bake at 350 for 20-25
    minutes. Shake muffins out immediately and while hot, dip into melted
    butter, then into the sugar/cinnamon mixture.

    Crockpot Breakfast Casserole
    1lb. tater tots
    1/2lb. diced ham
    1/2C. chopped onion
    1/2C. diced green pepper
    3/4C. shredded cheddar cheese
    6 eggs
    1/2C. milk
    Layer tater tots, ham,onions,peppers and cheese (in that order) twice.
    Beat eggs & milk. Pour over layers. Salt & pepper to taste.
    Cook on low for 7-8 hours.

    So how was everyones weekend?

    Ours was good, still have today as it is a long weekend here! We got quite a bit done but still have a bit to do today.
