    **Fresh Dill Question**

    How long will dill sprigs last? Is their a way to preserve it? What can I use it for other than fish?

     

    Thank you ......My supper last night was great!! Now I can have fish more often.... Sparty, I missed the corn on the cob!!!!!

    I freeze it. Just make sure you seal it good or it will smell up your freezer. I happen to like the smell. lol

    CP---sorry, we ate the corn without you...LOL!!!  Glad your fish turned out!!

    I grow dill every year and try to use it fresh if I can.  I have dried it out like other fresh herbs for use during the fall and winter.  I cut the "stalks" down and clothespin them to the line in the basement.  They dry up rather quickly 1-2 weeks tops.  Unfortunately, no hanging clothes on the line unless you want them to smell like dill!!  LOL!!!

    Beside fish...I have used dill in potato or macaroni salads...in tuna salad...crab salad.  Adds a nice flavor to them all!!

    Freeze Those Herbs

    Drying is the traditional method of preserving herbs, but freezing them is becoming popular because it is easy and locks in the flavor.

    Some herbs, like dill weed, are best frozen while still on the stalk. Place an entire bunch of dill weed in a freezer bag or container for freezing. When it is frozen, snip off bits as if it were fresh. Sage, rosemary, and thyme also freeze well on the stalk. Whole stalks can be tossed in the cooking pot. Retrieve them before serving.

    Alternatively, you can snip leaves from stems, rinse them and dry them thoroughly by spreading them over a cookie sheet overnight. Then freeze them the next day and package later. This keeps leaves from sticking together in clumps and they can be used straight from the freezer.

     

    * Dill is great with Potatoes. I like it in Quiche a lot.

    Dill belongs to the Umbelliferae family. You may be surprised to know that dill is a relative to parsley, cumin, bay and carrot. The leaves of the herb and the seeds may be found in cuisines of many countries. Dill is a traditional culinary herb and added to any dish from soups and potato salads, to sour cream fresh vegetable dill dip. It also has unique medical properties. Natural medicine shows dill weed to be a calmative.

    Dills scientific name is Anethum graveolens,

    Thank you all for your tips!!!! Being that I don't have the whole stalk, I will freeze it. Years ago I would dry it, but I lost a lot of the seeds..

     I love dill!  I use it in cucumber salad - just sliced cukes & onions, tiny splash of cider vinegar,0 sour cream and lot of dill.

     

    Also love it in stuffed mushrooms:  mix together cream cheese, couple splashes of worchestershire, grated or shredded parmesan cheese, sometimes minced onion, lots of dill.  Stuff mushrooms and bake 15-20 minutes @ whatever temp. I'm using the oven for.  I also like to sprinkle Tony Cacherys (sp?) on top before baking.  This was an approved South Beach Diet recipe and we love it.

     

    Also great in a new potato & sour cream potatoe salad.
