    Strawberry Cream Cheese Squares

     

    Ingredients

     

    2-1/2 cups vanilla wafer crumbs

     

    1/3 cup melted butter or margarine

     

    8-oz cream chees

     

    1-3/4 cups milk

     

    3 oz package of vanilla instant pudding mix

     

    1/2 tsp grated lemon rind

     

    2 cups fresh strawberries, sliced

     

    2 cups whipping cream

     

     

    Combine the crumbs and butter, set aside a 1/2 cup.  Press remaining crumbs into the bottom of a buttered 9x13" pan

     

    Add 1/2 cup of  the milk to the softened cream cheese and mix till blended.  Add pudding mix, remaining milk and lemon rind.  Beat 1 minute.  Pour over the crumb crust and cover with the strawberries.  Spread the whipped topping over the top and dust with the reserved wafer crumbs.

     

     

    Chill till firm about 2 hours~

    Gm  Linda,  I am going to use a different cookie base~  not super crazy about those vanilla wafers~  maybe  Lorna Doone or a Butter Cup  ~  I think either one of those would make a nicer base~   Janie
