    new to this website

    Hi everyone, a friend at work told me about this site, I think it's a wonderful idea!!!  My husband and I have a son that has down syndrome and he was diagnosed with celiac sprue about 6 years ago, at first we thought it was the end of the world but we are now so used to it and even our parents are too.  My son is 11 years old and even his classmates and their parents are aware of this and go out of their way to included him in birthday parties, pizza parties etc.

     It really is nice to meet you! I"m so glad your son's friends and parents are so willing to include him and help out! That is often not the case!! Your friends deserve a pat on the back!! If you ever need help with recipes or advice, please let us know! We're always ready to help!

    Hey, there. My mother sent me a link to this web site so here I am. It's nice to meet people with similar interests, albeit not by choice. I hope everyone is finding the resources they need. I got lucky and found a couple of health food stores nearby.

    My friend from work gave me this web site and some recipes from the magazine. I think this is going to be a big help and the networking looks great! I was so bummed out when I first started to bake gluten free. Now I know that there is good food and delicious breads to be made. So with that, off to the recipes I go :-)

    I never did any kind of baking until about 6 months ago. Failures were common in the beginning, but I must admit it's more fun than I expected. I make snack cakes using Glory brand sweet potato casserole filling. It worked so well I don't want to try anything else.

    This coffee cake is a little heavy (definitely not light and fluffy), but very satisfying if you like snack cakes. It also tastes good cold with hot tea or coffee.

     

    2 cups brown rice flour

    1/2 cup buckwheat flour

    1/2 of 15 oz. can Glory brand sweet potato casserole (contains sugar and powdered milk)

    4 tbls unsweetened applesauce

    2 eggs

    about 1 1/2 cup water

    1/2 tsp cinnamon

    1/4 cup chopped dates or chocolate chips (optional)

     

    mix all ingredients thoroughly

    pour into buttered 9x7 glass baking dish

    cook in 400 degree oven for about 30-35 minutes (edges will be brown)
