    Calling all Iron Chefs!!!

    I am looking for a tried and true recipe for hot chicken dip that DOES NOT use any kind of cream of whatever soup.

    I have a brunch to go to tomorrow and I have a few ingredients on hand (chicken, mayo, water chestnuts, wonton wrappers, cheddar cheese, cream cheese, bacon...)

     

    What would you make with these ingredients????

    You have some great flavors to work with. I'm not sure how much you have of all the ingredients but here's what I think...

     

    I would fry the bacon and chop it up. Set it aside. (Do you have an onion? I would chop it and cook it in some of the bacon grease, then set it aside) Just pour out the grease and use what's left in the pan.

     

    Grill the chicken, if you can ,to get a bit of depth of a new flavor. If not, (I'm assuming it's a boneless, skinless breast) just boil it til it's done (180*inside). Let it set to room temp then chop it and set it aside.  Chop up your water chestnuts too.

     

    Then I would soften your cream cheese and mix it with the mayo until thoroughly combined. Add some of your cheddar. Mix. Then add your chicken, onions and water chestnuts. Season with salt and pepper to taste. Spread it into a greased baking dish, top with more cheddar and bake at 350* for 20-25 min. or until it's all bubbly around the edges. Garnish with the crumbled bacon.

     

    While it's baking, I would cut your wontons in half (triangles) and fry them in peanut oil or whatever plain oil you have on hand. When they are golden brown, remove from the oil and sprinkle with a bit of salt and pepper. Use these as dipping tools for the chicken dip.

     

    PS If you had any garlic, try mincing that and sauteing it with the onions. Or add a bit of garlic powder to the cream cheese mix. You could also chop up peppers and saute with the onion if you have them. That would be good! I hope this is clear enough. I'm just pulling it out of my head and putting it on the keyboard.

    Here's what I would do:

    Cook the chicken then dice.Drain water chestnuts then dice.Make sure cream cheese is softened.Cook bacon crisp,crumble.Shred some cheddar cheese.Mix all the ingredients(except wrappers.) to a consistency that holds together easily.Put a Tbsp. or more of the mixture in each wrapper and roll up like a burrito.Bake or fry till golden brown. Depo!!!
