I posted this recipe a week or so ago and based on the awesome looking picture I just had to make it. I did not have the small red potaotes that the recipe called for but I did have a few small all purpose potatoes so that is what I used. This is a teriffice recipe and I will make it again~ and again~ Potato Salad bought to its limits ~ By placing the prepared potato salad back into the baked potato shell, just brings out such a wondeful hearty potato taste, It's like getting an added potato bonus~ I made sure to leave some of the potato in the shell, and that's where the bonus came from~ With this in mind I decided to place some of the dressing inside of the potato so that the salad would not be dry` ~ Then I just filled up the prepared shells with the potato salad~
Any potato salad would work in this recipe if you have a favorite, use that, Just be sure to make extra dressing so that you can ice the inside of the shell with it, before adding the salad~ It will make such a big difference~ Janie ~ No forks needed just pick it up and eat it like a sandwich~
Potato Salad Bites
12 small red bliss potatoes ( baked in a 400 degree oven for about 30-40 minutes)
Once they have baked and are cool enough to handle, cut them in 1/2 and scoop out the potato pulp into a bowl~
Add all of these ingredients and mix well. Fill the potato shells with the salad mixture
1 tsp salt
1 hard cooked egg, chopped
1/4 cup chopped celery
3 Tbs chopped dill pickles
2 Tbs mayonnaise
1 tsp yellow mustard
2 green onions sliced
3 radishes sliced
The green onions and radishes are for the garnish~ I added the onions to the potato mixture and saved the radishes for the Cracker appy~
* Cut a small slice from the bottom of each potato so that they will sit straight ~
