    R & R~ Potato salad Bites~ Absolutely Wonderful & Cute~

    I posted this recipe a week or so ago and based on the awesome looking picture I just had to make it.  I did not have the small red potaotes that the recipe called for but I did have a few small all purpose potatoes so that is what I used. This is a teriffice recipe and I will make it again~ and again~  Potato Salad bought to its limits ~ By placing the prepared potato salad back into the baked potato shell, just brings out such a wondeful hearty potato taste, It's like getting an added potato bonus~  I made sure to leave some of the potato in the shell, and that's where the bonus came from~ With this in mind I decided to place some of the dressing inside of the potato so that the salad would not be dry`  ~ Then I just filled up the prepared shells with the potato salad~

    Any potato salad would work in this recipe if you have a favorite, use that, Just be sure to make extra dressing so that you can ice the inside of the shell with it, before adding the salad~  It will make such a big difference~  Janie   ~  No forks needed just pick it up and eat it like a sandwich~ 

     

    Potato Salad Bites

     

    12 small red bliss potatoes ( baked in a 400 degree oven for about 30-40 minutes)

     Once they have baked and are cool enough to handle, cut them in 1/2 and scoop out the potato pulp into a bowl~

     

    Add all of these ingredients and mix well.  Fill the potato shells with the salad mixture

     

    1 tsp salt

     

    1 hard cooked egg, chopped

     

    1/4 cup chopped celery

     

    3 Tbs chopped dill pickles

     

    2 Tbs mayonnaise

     

    1 tsp yellow mustard

     

    2 green onions sliced

     

    3 radishes sliced

     

     

    The green onions and radishes are for the garnish~  I added the onions to the potato mixture and saved the radishes for the Cracker appy~

     

     

    * Cut a small slice from the bottom of each potato so that they will sit straight ~

     

     

    I have to give this one a 5 Star ~  It has everything going for it~  Janie

    Hi Ellen, I would love to add the photo ~  Its' in a  little cookbook~  I am sure that many of you smart and savy comptuer  experts could somehow work that out~    The cookbook is called Appetizers and it's a Betty Crocker book.  The ones that you can get in the supermarket  ~  Hope this has helped as I see where others would like to see this splendid recipe as well~   Sorry, I'm just not puter wizzie~   Janie

     Thanks anyway, Janie! I was just curious about what they did with the radish slices to garnish. I never buy radishes and I saw that you did not use them to garnish. Did they stand a slice up on end, or put it flat with the green onions on top?!?

    Hi Ellen,  They sliced it and pushed it down into the salad so that it stood up~  Very pretty~

     

    Another thing,  Like everyone else I think that My potato salad recipe is the best~ Wink Well this recipe is very, very good and I love the addition of the 'Dill " pickles!~  Not relish~  Just that little bit add's some Spark!~  seriously good~  I used Kosher Dills~  Janie

    Oops, forgot to add, that being that, the recipe calls for small potatoes they probably sliced the radish slice in half, forming a 1/2 moon~  Janie

     Okay, I can picture that-it would look "fancy" and special! I am more of a "sprig of parsly" garnisher, but I'm trying to do better!
