    i found this recipe on the recipe board, posted by twinkle30, so thanks to her for this lovely recipe!!  i love fresh basil!!!

    Summer Basil Pasta Salad

    With the long hot days of summer, you will find that you will need something lighter than a T-bone steak.

    If you are seeking a fresh and light pasta salad, then you will need to serve this at your next gathering.

     

    Recipe:
    16 oz. box Whole Wheat pasta, find a fun shape.
    10 oz. frozen chopped spinach (2 cups fresh could be substituted)
    1 cup fresh diced tomatoes
    1/4 cup finely sliced red onion
    4 Tbsp. fresh basil, chopped
    1/4 cup Balsamic Vinegar
    1/4 cup Olive Oil
    3 Tbsp. garlic powder
    Salt & pepper to taste

     

    Pasta: Cook pasta according to the package. Drain and let cool. Or run under cold water and ice.

    Vegetables: Thaw spinach and drain all excess water by pressing it with your hands.
    Wash and dice tomatoes. Slice red onion. Chop fresh basil.

    Mix cooled pasta, vegetables, and remaining ingredients in a large mixing bowl. Let sit in refrigerator for at least one hour.

    Garnish with Parmesan Cheese and Basil

     

    Tips from Chef Bek:

  • White pasta can be substituted for wheat.
  • Dried basil can be substituted for fresh. (when using fresh herbs in a recipe, use 3 times as much as you would use of a dried herb)
  • Chicken broth can be substituted for the oil
  • Don’t have Balsamic Vinegar; replace it with your favorite Fat Free Italian Dressing.

    This pie also works well as tarts.  Don't use frozen fruit, they are too runny. The fruits I usually use are strawberries, blueberries, raspberries, kiwi,canned mandarines, and bananas. If fruit glaze is not available, make a simple syrup of 1/2 c water, 1/2 c sugar, and 1/4 tsp. corn starch

    Fruit Custard  Pie

    1 frozen or home- made pie crust

    3 Tbsp Birds custard powder

    4 Tbsp sugar

    2 c milk

    1 Tsp. vanilla

    Various in season fruits

    1 pouch clear fruit glaze

     

    Bake pie shell until done. Combine custard powder, sugar, milk,and vanilla, bring to a light boil, stirring constantly. When thick pour into baked pie shell. Allow to cool for a few minutes. Arrange fruit on top decorativly. Prepare fruit glaze and brush on top of fruit. Chill and serve.

    that sounds like a nice cool dessert! my strawberries are coming on ........i will try this tomorrow, i love recipes that i have all the ingredients in the pantry!!

    if you're only using one type of fruit to top the pie with, they have fruit specific glaze mixes that add a little extra color and flavor. they should be around the produce section.

    My aunt makes a salad like this for her BBQ at the lake.

     

    Taco Salad

    1 lb groung beef, browned

    1 envelope taco seasoning

    1/2 head lettuce, shredded

    1 c chedder cheese, shredded

    1 tomato, diced

    1 green pepper, diced

    1 small bag  zesty or taco flavored doritos chips, lightly crushed

     

    Prepare beef with seasoning as directed on pkg (usually you have to add some water). Let cool for 1/2 hour. Meanwhile, combine other ingrediants in bowl. Add beef to other ingrediants, the liquid will act as a dressing. Chill, if desired and serve. If too dry add a little regular cooking oil.

    Maple leaf spinach-and-strawberry salad Makes 8 servings 1/2 cup (125 mL) vegetable oil 1/3 cup (75 mL) cider vinegar or white wine vinegar 2 to 3 tbsp (30 to 45 mL) pure maple syrup 1 tbsp (15 mL) Dijon mustard 1/2 tsp (2 mL) salt 2 (10-oz/284-g) bags baby spinach or 3 large bunches spinach 1 small red onion 1 pint strawberries 2/3 cup (150 mL) sunflower seeds, preferably salted (optional)  1.In a small bowl, whisk oil with vinegar, 2 tablespoons (30 mL) maple syrup, Dijon and salt. Taste and add remaining maple syrup, if you like. Wash and dry spinach well. Tear large leaves into bite-size pieces. Cut onion in half. Place each half cut-side down on a cutting board and thinly slice. Wash strawberries and slice into quarters. Place spinach, onion and strawberries in a large salad bowl. If making ahead, dressing can be left at room temperature up to 1 day. Cover salad with a damp paper towel and refrigerate up to 4 hours. Just before serving, whisk dressing, pour over salad and toss. Sprinkle with sunflower seeds, if using, and serve. First published in Chatelaine's 07/2002 issue

    Spinach & Mandarin Salad 1 small can mandarin orange slices, reserve liquid1/2 red onion, thinly slicedgenerous handful bean sprouts1/2 bag cleaned baby spinach1-2 Tbsp. soy sauce3 Tbsp. toasted sesame seeds -Toss together the orange slices, onion, bean sprouts and spinach-In jar, shake the reserved mandarin juice with soy sauce-Pour over salad, and toss to coat-Sprinkle sesame seeds over top

    Shrimp & Scallop Cakes
        with Salsa
    Ingredients:
    ½ lb shrimp, peeled deveined and coarsely chopped
    ½ lb scallops, chopped medium by hand
    1-¾ C seasoned bread crumbs
    1 T horseradish
    ½ t chopped fresh tarragon
    1 t chopped fresh ginger
    ¼ t paprika
    dash of cayenne
    ¼ C green onion, chopped fine
    ½ C fresh corn
    1 T lemon juice
    3 eggs, beaten
    salt and pepper to taste
    Mix together scallops, shrimp, ¾ cup bread crumbs, horseradish, tarragon, ginger, paprika, cayenne, green onion, and corn. Mix lemon juice and eggs; combine with shrimp and scallop mixture.Wet hands lightly and form into 6 to 8 3-inch patties (2-½ oz - 3 oz ea). Coat in remaining bread crumbs and refrigerate at least 20 minutes to a day ahead.Heat equal amounts of olive oil and butter in a large sauté pan and cook patties until brown on each side, about 2-3 minutes per side. Serve warm with Peach & Pineapple Salsa on top. For a lunch you can put them on a bed of lightly dressed greens if desired. Serves 6 to 8.Peach & Pineapple Salsa
    4 medium peaches, peeled and diced in ½ inch pieces
    1-½ C fresh pineapple, diced in ½ inch pieces
    1 T fresh lime juice
    ¼ C red onion, diced small
    ½ medium jalapeno, diced fine with seeds and ribs removed
    salt and pepper to taste
    Mix all ingredients together and let sit for at least 2 hours or overnight.

    Strawberry Coffee Cake

    In a large bowl, combine 1 cup flour, 1/2 cup sugar, 2 tsp. baking powder, 1/2 tsp salt.

    Add 1/2 cup milk, 2 Tbsp butter and 1 egg.  Beat for 2 minutes.

    Spoon batter into a greased and floured 8" pan.  Top with 1 1/2 cups sliced strawberries.

    Combine 1/2 cup flour and 1/2 cup sugar.  Cut in 1/4 cup butter until mixture resembles coarse crumbs.  Add chopped pecans or walnuts (optional).  Sprinkle crumb mixture over berries.

    Bake at 375* or about 35 minutes

     

    This can be served alone or with additional sliced berries and whipped cream.

    I have the same strawberry cake recipe - except my recipe is called Baked In Strawberry Shortcake.  It's a real good cake. In fact I was thinking of making it the other day when we bought some strawberries. Maybe I'll make it tomorrow before it gets too hot here. By the way you can also make this with other fruit. I've made it using peaches.
