    Grape Salad.. Excellent for Picnics.. easy and delicious!

    Grape Salad

    This dish serves 12 to 15 people excelent for Picnics, to take to Church,

    to take to Nursing homes or any Potlucks! This is so delicious and so easy!

     

    1 1/2 lb green grapes

    1 1/2 lb red grapes

    8 oz. fat free cream cheese

    8 oz. fat free sour cream

    1/2 cup sugar (can use Splenda)

    1 tsp. vanilla

    4 oz. chopped pecans or walnuts

    3/4 cup brown sugar

     

    Wash grapes and pat completely dry,

    Mix 8 oz cream cheese and 8 oz sour cream together

    Stir in 1/2 cup sugar or (Splenda) and vanilla

    Fold in grapes untill completely covered

    Spread into a large glass 9 by 13 baking dish

    Slightly brown 4 oz. chopped pecans or walnuts,

    when cool stir into 3/4 cup of brown sugar.

    Sprinkle mixture completely over top of grapes gently pat it on there.

    (do not stir in there... only on top of grapes)

    Cover with Saran wrap and refrigerate overnight.

    this recipe is very good.  We never let it sit over night though - many times it gets eaten right away.  Especially by my kids!

     Cut the grapes in halve when you take this dish to a nursing home it is easier to eat, you can still pat it dry a little more, otherwise it could be too runny.

    I made this grape salad for a Christmas brunch at our clubhouse, and it was the hit of the affair.  Also, it made a nice presentation on a red oval platter.  Mary Kay

    I made half a recipe for my family of four and it's was almost inhaled.  I used only red grapes since that's what I had on hand.   I had a container of brown sugar with some cinnamon mixed in and used that and also toasted the pecans. My daughter told me not to lose the recipe, that it was a "keeper".  Isn't it a joy when you find a new recipe that is so delicious?

    I make this salad with black grapes...cause I like black grapes the best. It's good any way you make it. I also add some Cool Whip to lighten/fluff up the dressing.

    I would probably use light instead of fat free, but this looks good and all I hear is raves about it, so maybe the next luncheon at work, or for the 4th.

    Do the nuts pick up the brown sugar, or what? Are they to be somewhat like a sugared nut?

    Thank you all for the input and different ways to make and serve this dish, I made notes of it all.. the red color platter, the cinnamon with the brown sugar, fluff it up more with coolwhip. So much fun!!! Susan

    Rebecca let the nuts cool down and they do not pick up the brown sugar, it will if you heat the nuts in oil but you only want them crispy. Susan

    SUSAN:  I used low fat cream cheese.  Also, for those who perhaps do not like nuts -- cannot fathom why -- I mixed the toasted nuts with the brown sugar.  Rather than putting them IN the salad, I put them all around the salad, thus forming an oval trench along the perimeter of the oval red (plastic) platter that I had gotten at the dollar store.  Mary Kay

     P.S.  The Cool Whip sounds like a good addition.

    Susan - I may be overthinking this but,...don't you want the brown sugar to stick? I'm thinking if the nuts are cool they won't pick up any brown sugar and what would be the point in that. I just can't picture it.

    Hello Rebecca, I made it so it did not stick to the brown sugar, but you could do it that way, I found on Allrecipes a Green Grape Salad nearly the same as mine and there were 125 reviews.

     I will share the link... it was fun to see how every one made this salad different.

    I have to hop in the shower, we have a 100 degrees today the Grape Salad is so good and refreshing on a hot day like this, we like fruit mixtures for lunch or salads.

    I make this salad, but have tweaked it because my dh is a diabetic.
    I use 1 1/2 # grapes and 1 1/2 # goleden delicious apples
    1 small package sf vanilla pudding mixed with 1 3/4cup milk,
    add 1 8oz. package cream cheese and 2 tsp. maple flavoring. Blend well, and add to grape and apple mixture.  I also add a cup of peanuts.   VERY GOOD!
