    Spaghetti Squash With Chicken, Broccoli, and Sun Dried Tomatoes

    Spaghetti Squash With Chicken, Broccoli, and Sun Dried Tomatoes


    1 spaghetti squash (about 3 1/4 pounds)
    1/2 cup sun-dried tomatoes, packed without oil
    1 cup hot water
    2 cups small broccoli florets
    2 cooked chicken breasts, cut into thin strips
    1/2 cup tomato sauce
    1 tablespoon extra-virgin olive oil
    4 garlic cloves, minced (about 2 teaspoons)
    1/2 teaspoon salt
    1/4 teaspoon freshly ground black pepper

    Preheat oven to 375°.
    Pierce spaghetti squash 7 or 8 times with a fork. Place on a baking sheet; bake at 375° for 1 1/2 hours or until tender. Cool. Cut squash in half lengthwise; discard seeds. Scrape inside of squash with a fork to remove spaghetti-like strands. Keep warm.
    While squash bakes, combine sun-dried tomatoes and 1 cup hot water in a bowl. Let stand 30 minutes or until soft. Drain, reserving 1/2 cup liquid. Chop the tomatoes.
    Steam broccoli, covered, for 2 minutes or until crisp-tender. Rinse broccoli with cold water; drain and set aside.
    Combine squash, tomatoes, broccoli, and remaining ingredients; toss gently.

    Yield: 4 servings (serving size: 1 1/2 cups)

    Hey John, you are on a roll with the spaghetti squash recipes!   Does this mean you are getting ready for a spaghetti squash harvest later this summer?  Do you have any in your garden?

     

    I love spaghetti squash and appreciate new ways to enjoy it.  My DD has some growing in her garden but we didn't have enough room and will stock up at the farmer's market later this summer!

    Hi Sally! How ya doing my friend?

     

    Yes, I have spaghetti squash planted. 8 plants anyway. I hope the animals let me have some. Last Summer some critter (I think it was a raccoon) ate all of my squash, most of my zucchini, my pumpkins, all of my corn and took bites out of about 50-60 tomatoes. I also caught a groundhog eating my broccoli plants and the tops off my green bean plants.

    I plan on building a chicken wire cage over my spaghetti and Hubbard squash bed in a couple weeks. I'm bound and determined to enjoy my harvest this year, even if I have to buy a live trap to get rid of the critters.

    Good luck with that!  I think we will all have to play "Are You Smarter Than A Racoon(or Groundhog)"  this year!  :)

    So far, so good. Nothings touched my squash yet and harvest time is just around the corner. Looking forward to trying this.
