Kim - Your zoo sounds awsome! We just seem to have tigers, monkeys and an aquarium. Oh - forgot about the bird show. That is exciting your daughter wants to do the card making. Awsome. Cannot wait to see it.
Here is the ice cream pie recipe. It makes 2 pies. You can also purchase premade oreo cookie crust but it is just not as good....Not thick enough for my taste.
Sunday Pie
2/3 c chopped pecans (optional)
Step 1 - take out icecream to let soften. (1 pint)
Step 2 crust
3-4 T sugar
1 1/3 c oreo crumbs (I used double stuffed cookies, put in lg zip lock bag and crush with rolling pin, unless you have a food chopped) It is about a row and 1/2 of a package. Then I save the other 1/2 to make a batch of 'dirt cake'
1/3 c melted butter
Mix al crest ingredients press into GREASED pie pan. Freeze briefly.
Step 3 - choc sause
1/4 t salt
2/3 c evaporated milk (very small can)
1 1/4 c semi sweet choc chips
1 1/4 c mini marshmellows
1 t vanilla
Heat milk, pour into blender with salt, choc chips and marshmellows and vanilla. Blend. Allow sause to cool.
Step 4
Take crust out of freezer. put a layer of ice cream in pan. drizzle some choc sause (nuts if you want) and put in freezer for about 5 min. Repeat until pie pan is full.
Note: When I made it the other day I put it into a greased springform cheesecake pan and made 1 "pie". I have also put it into a cake pan and did one layer with choc on top.
We do not use all of the choc sause. Dh thinks it gets to sweet. So I save it and put it on a sundae with an oreo and feel like I am having a piece of pie before it is done.
