    Maybe asking for the impossible, but thought you might be able to help me...

    Next week is our family reunion.  We will be traveling about 10 hours to get there.  We are staying in cabins that doesn't have refrigeration.   My family is responsible for part of a meal one of the days we are there.

    Knowing there isn't refrigeration and that I have to travel quite a distance, I need to come up with a side dish that can be served with hamburgers.  Everything I come up with needs to be refrigerated or kept on ice. 

    Does anyone have an idea of something that goes well with burgers that would feed a crowd?  Any ideas would be appreciated!!

    think cans.  Will you have electricity?  If so you can bake some baked bean or corn in the CP.  you can also take a pan and heat them up over the coals.  there is a salsa recipe on the recipe site which I think only uses canned items- corn, tomato and beans.  I will try to copy it for you on the next post.

    ps I hope it is ok that I joined your group, my DD just boomaranged back home, so I guess I qualify!!

    Here is a recipe from Barb, that was posted on recipes earlier today.

     

    Nice & Easy Salsa

     

    1 can white shoepeg corn (don't drain)

    1 can chopped tomatoes (I like the one with the basil in it)

    minced garlic (as much as you like)

    1 can of black beans drained

     

    Mix all of the above, then add smooth taco sauce until you get the constancy that you like.  If you like it spicier you can add some hot pepper or hot pepper sauce.  That's it!  Then you serve it with tortilla chips or Frito scoops.

    How close will you be to a store?  you could pick up some grapes and bananas or something grown locally?  strawberries?  would just have to eat that day for the berries.
