    Doesn anyone have a good idea for...

     Fresh Spinach? I have a huge bunch of very fresh spinach and I would like to use it in a recipe NOT COOKED. Maybe a sandwich or salad with a bangin' dressing recipe? TIA

    It's made with frozen spinach though so I'm not sure whether that makes a differance or not though.

    This is a really good one.

    Spinach Salad with Hot Bacon Dressing (kathyf1)

    8 slices bacon, chopped
    1/4 c. apple cider vinegar
    2 t. fresh lemon juice
    2 T. sugar
    1/4 t. black pepper
    10 oz. pkg. fresh spinach, washed and trimmed
    1 hard boiled egg, chopped

    In a large skillet, cook the bacon over medium high heat until crisp. Add the vinegar, lemon juice, sugar and pepper; mix well. Place the spinach in a serving bowl; add the hot bacon dressing and toss to coat. Sprinkle with the egg and serve immediately. 4-6 servings

    This is one I make a lot-it's the only way I can get my husband to eat spinach! The dressing is great on any salad.

     

     

    STRAWBERRY SPINACH SALAD

    1 Tbsp. poppy seeds (optional-I use them when I have them)
    1/2 c. balsamic vinegar (I go a little heavier on the vinegar)
    1/2 c. olive oil (since I use a little more vinegar, I go lighter on the oil)
    1/3 c. sugar
    1/4 tsp. paprika
    1/4 tsp. Worcestershire sauce
    1 Tbsp. minced onion
    10 oz. fresh spinach - rinsed, dried and torn into bite-size pieces
    1 quart strawberries - cleaned, hulled and sliced
    1/4 c. slivered almonds, if desired

    In a medium bowl, whisk together  poppy seeds, sugar, olive oil, balsamic vinegar, paprika, Worcestershire sauce and onion. Cover, and chill for 1 hour.
    In a large bowl, combine the spinach, strawberries and almonds. Pour dressing over salad, and toss. Refrigerate 10-15 minutes before serving. (I do this if I'm serving it for company, other than that, we dress it separately on our plate). 4-6 servings.

    We LOVE spinach sauteed in alittle olive oil & garlic.  Just until it's wilted.  Only takes a couple minutes. 

    (I saw you were looking to eat it raw, but thought I'd throw this out there just in case Wink)

     Well I'm definitely doing the salads. I've had one similar to the hot bacon one and loved it. I think I will also try making a panini type of sandwich with meat, cheese,some sort of sauce and a pile of spinach. Maybe the bread will protect it a bit from being cooked. I've got a whole bunch so I'll be able to try a lot of recipes. Thanks!
