    Blackberry Pie Bars

    Blackberry Pie Bars


    Crust & Topping
    3 cups all purpose flour
    1 1/2 cups sugar
    1/4 teaspoon salt
    1 1/2 cups chlled unsalted butter

    Fruit Filling
    4 large eggs
    2 cups sugar
    1 cup sour cream
    3/4 cup all purpose flour
    Pinch of salt
    2 (16-ounce) packages frozen blackberries, defrosted and drained

    For the crust and topping:
    Preheat the oven to 350F. Grease a 9x13-inch baking pan.

    Combine the flour, sugar and salt in a food processor fitted with the metal blade. Process until fully combined. Cut the butter into 1/2-inch cubes. Add the butter to the flour mixture and process until the butter is evenly distributed, but the mixture is still crumbly.

    Reserve 1 1/2 cups of the crumb mixture for the topping. Press the remaining crumbs into the bottom of the prepared pan. Bake the crust for 12-15 minutes, or until it is golden brown. Cool for at least 10 minutes.

    To make the filling:
    Whisk the eggs and sugar together in a large bowl, then add the sour cream, flour and salt. Gently fold in the blackberries. Spoon the mixture evenly over the crust. Sprinkle the reserved crumbs evenly over the top. Bake for 45 to 55 minutes, or until the crust is lightly browned. Cool for at least 1 hour before cutting.

    Makes approximately 2 dozen bars

    Thank you for sharing this, Wolfs_Love.  They sound scrumptious and I'm betting they could be made with other berries, also, don't you think?

    Jo I was thinking the same thing, I have a triple berry mixture from Schwans that I think would be yummy!

    How'd you know I bought a bag of mixed berries (raspberries, strawberries, black/blue berries) at the store and don't know what to do with them!?

    This receipe really sounds yummy.  BUT !!  3 1/2 cups of sugar ?  Wonder how it would turn out with Splenda ?  Was amt correct ?  It just sounds like way to much sugar but i could be wrong.

    Cassie, my Dad uses splenda in all of his, since he is diabetic. He made a blackberry pie today, wit splenda.

     

    Thanks! We will be able to pick blackberries soon, if not already. This sounds perfect. It would be good for our family reunion this month, too.

    Wonder if you can use other berries in place of the blackberries?

    I love blackberries, but my youngest dd won't touch them.

    I picked 16 quarts of black raspberries and 4 quarts of red raspberries this past weekend and made a coffee cake out of each to bring to work today.  Our blackberries aren't ripe yet but I interchange raspberries and blackberries in all sorts of recipes so I'm going to try this one with some raspberries.  However, blackberries aren't nearly as sweet as raspberries, so I adjust the sugar up or down accordingly when I make it with a different berry than what the recipe calls for.
