    R & R Katemarie's Rhubarb Custard Cake - double whammy!

    katemarie you double whammied me on this recipe.  How you ask? Well the only changes I made were no nuts because I give some treats to people without teeth and because you got me so darn ADDICTED to french Vanilla Cake MIX! Oh man does that french vanilla cake mix make such a huge difference.  I will never by a regular white cake mix again.  This recipes got so many great reviews by everyone who at it, the worst thing I heard was when someone lift  the cake pan and said "It's all gone!".  Someone else told me they have never, in their life had such a delicious dessert.  My dh who only like raw rhubarb went bonkers over this one.

    Rhubarb Custard Cake

    1 yellow or white cake mix. (French Vanilla Cake Mix)

    3 Cups chopped rhubarb.

    1 Cup sugar

    2 Cups whipping cream.

    1 cup pecans

    Instructions :

    Mix cake mix according to directions on box and put cake in 9 x 13 inch greased pan.

    Arrange rhubarb evenly over top of uncooked cake.

    Sprinkle sugar evenly over rhubarb.

    Pour unwhipped cream evenly over rhubarb.

    Bake at 350 degrees for 45 minutes.

    The cream, sugar, and rhubarb will go to the bottom of the pan forming a custard - like layer.

    Wow, I have never heard of it without cream.  I am gonna have to tell someone about that since they asked me....

    I too love this recipe.  I have been thinking about making it with fat free evaporated milk in place of the heavy cream to see if I can lighten it up a bit.

    If you don't use the cream though just sprinkle the top with cinnamon and sugar, not a full cup.

    We love this cake too~with all the healthier eating that we do, this is one of our splurges and it is SO worth it!

     piggykins, What a great review you did of this recipe. I had it many, many years ago before DH found out he couldn't eat dairy. [:'(]

    I wonder if it would work if I used coconut cream instead of whipping creamIdea. It would add a coconut flavor but that might be nice with the rhubarb.  I think I'm going to have to give it a try. I've got rhubarb growing in the backyard. Thank you for turning my brain on this morning. Lol!

    This is usually the first thing I make when the rhubarb is ready in the garden in the spring.
