Anne! It's so good to see you! We've missed you. Did I tell you I got a new computer a month ago? It's a Toshiba laptop hooked up my regular monitor, keyboard and mouse. That way I have a desktop computer but I can take it with me wherever I go. Hint, hint. 
Zora, it's hard to believe what goes on at Bob's work. That's insane! Somebody has to look after the patients no matter what it takes. Must be awfully stressful for Bob and you. Hugs to you both.
Mangos are the best fruits ever, especially cut up, chilled and sprinkled with lime juice. I'm also attaching an heirloom (since 1987 anyway
) recipe for beef with mango. It's quick, easy and tastes wonderful, and my family loves it. I serve it quite often for company, too. Have never met a single person that doesn't like this meal.

BEEF WITH
MANGO
8 oz (225 g) Fillet of beef
1 large mango
4 tbsp. oil
1 tbsp. fresh, shredded ginger
1 shallot, finely sliced
Marinade
1 tbsp. white wine
1 tbsp. soy sauce
1 tsp. corn flour
1/4 tsp. sugar
1/4 tsp. fresh ground pepper
Cut beef into
thin bite-sized pieces.
Blend together
the ingredients for marinade,
add the beef
and leave for 20 min.
Peel &
slice the mango.
Set wok over
high heat, add oil and wait until almost smoking.
Reduce heat to
moderate add beef & ginger and stir fry for 1-2 minutes.
Remove beef
and ginger with slotted spoon.
Toss mango
slices in hot oil for a few seconds,
return beef
& ginger to the wok, add shallots.
Stir fry for a
further few seconds. Serve immediately.
