    R & R Apple Pie in a Jar

    I told some of you that I would be making this today and would post the R & R when I got through.This stuff will make you grin from ear to ear.The apples come out tender/crisp.Nice sweet flavor with just a hint of tang from the lemon zest.The cinnamon and nutmeg are just right and finish off the "pie" taste.It will be good on pancakes,waffles,toast,french toast or spooned warm over ice cream.I know my DGK will ask me to make them some more.I've learned over the years to plan on getting more than the recipe says when doing jams & jellies.It said it would make six-8 oz. jars but I got 9.

    3/4 cup  raisins or dried cranberries ( used raisins)

    6 cups chopped,cored peeled Granny Smith apples

    grated zest and juice of 1 lemon

    1 cup unsweetened apple juice

    1 pkg. powdered fruit pectin

    9 cups sugar

    1 tsp. cinnamon

    1/2 tsp. nutmeg

    In a food processor fitted with a metal blade,pulse raisins till finely chopped.Set aside.In a large stockpot combine the apples,zest and juice plus apple juice.Bring to a boil over high heat,stirring frequently.Reduce heat and boil gently,stirring occasionally,till apples soften,about 10 minutes.Remove from heat and whisk in pectin till dissolved.Add raisins.Return to high heat and bring to a boil,stirring frequently.Add sugar all at once and return to a full rolling boil,stirring constantly.Boil hard for 1 minute.Remove from heat and stir in cinnamon and nutmeg.Skim off foam.Ladle hot jam into hot jars,leaving 1/4 inch headspace.Adjust two piece lids.Place in water bath and process for 10 minutes. Depo!!!

    This sounds wonderful!  Do you think I could use Romes in it??  I don't know the difference in apples with cooking them...

    Thanks Depo for the recipe. It sounds delicious. I have never heard of this before but I will be making this for sure sometime and I'll let you know when I do. I can just tell it will be good because all of your recipes are good.

    Hey Depo,

    I found Caramel Apple Jam recipe on Allrecipes and the reviews called it the same as yours. I plan on making it tomorrow.

    INGREDIENTS

    • 6 cups diced peeled apples (1/8 inch cubes)
    • 1/2 cup water
    • 1/2 teaspoon butter
    • 1 (1.75 ounce) package powdered fruit pectin
    • 3 cups sugar
    • 2 cups packed brown sugar
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg

    DIRECTIONS

    1. In a large kettle, combine the apples, water and butter. Cook and stir over low heat until apples are soft. Stir in pectin and bring to a rolling boil, stirring constantly. Add the sugars, cinnamon and nutmeg and return to a rolling boil. Boil for 1 minute, stirring constantly.
    2. Remove from the heat and skim off any foam. Ladle hot jam into hot sterilized jars, leaving 1/4-in. headspace. Adjust caps. Process for 10 minutes in a boiling-water bath.

    Here is my simple version of Apple Pie Filling.

     

    Apple Pie Filling

    36 cups of sliced peeled apples
    1 tsp of salt
    1 3/4 tbsp of lemon juice
    3 cups of sugar
    1 tbsp of cinnamon
    Fresh Fruit Powder



    Wash, peel & core apples. To prevent darkening use Fresh Fruit Powder following the directions on the label. Drain apples & place in a large kettle with the remaining ingredients. Bring slowly to a boil & simmer until all the sugar is dissolved (5 mins.)stirring constantly. Pack into hot jars leaving 5 cm of headspace. Seal & process for 25 mins. For pie: line a pie pan with pastry. Sprinkle with 2 tbsp of cornstarch. Add 1 jar of filling & sprinkle with 2 more tbsp of cornstarch. Cover with pastry, seal edges & cut vents. Bake 10 min. @ 425°F & then reduce to 350°F & bake 30 - 40 mins. more. Yield: 9 - 1 litre jars.

     

    You could also use instant tapioca in place of the cornstarch.

    It is the correct amount, it makes 9 large jars of filling.
