    R&R: Wheat Free Fudge Drops

    Big Smile I made this easy recipe today and they are so fudgy! They don't spread at all, so you can put them close together on the baking sheet. You might be able to bake them for only 8 minutes. I'm afraid they will be gone before bed time tonight. Lol! These are great if you can't eat wheat or eggs or dairy, heck, they are great even if you canWink

     Wheat Free Fudge Drops

     
        1 1/2 cups barley flour
        1/2 cup  oil
        2/3 cup cocoa powder
        1 tsp. instant espresso powder

        1 teaspoon vanilla
        1/4 teaspoon baking powder
        3/4 cup sugar
        7 Tbsp. water
        1/2 teaspoon salt

        1/2 cup mini chocolate chips

     


       
        Spray a baking sheet with non-stick spray and preheat your oven to 350 degrees. Combine all ingredients in a large bowl and stir until thoroughly mixed.The dough will be thick. Drop by tablespoons onto prepared baking sheet. Bake for 10 minutes.  The cookies do not spread.

    Makes about 2 dozen 1" cookies.

    Thank you for the R&R chefly!   If I'm not concerned with wheat can I sub in an equal amount of all purpose flour?

     It should work, but start with less flour and add it as you mix it together. I'm not sure if barley flour is more absorbent than wheat flour. You should have a not sticky dough that can be formed into balls.

     I was lucky to find barley flour for only $0.59/lb. I've got a few more recipes to try then I've got to start searching again. I only bought a couple of pounds but it seems to last forever. The low gluten content makes it a little more challenging to work with unless I use a recipe developed for barley flour.
