    REC:~Grilled Chicken Marinades~

    Dinners are so easy when you start with grilled chicken. You can serve with a salad, potato and fresh fruit for dessert.

    Sesame Seed Marinade

    Ingredients:
    1 tablespoon brown sugar
    3 tablespoon light or regular soy sauce
    1 tablespoon sesame seeds
    2 cloves garlic; chopped
    1/8 tsp. fresh black pepper
    4 boneless or bone-in chicken breast halves

    Combine all ingredients except chicken in a shallow dish. Mix well. Add chicken, turning to coat. Cover and marinate in the refrigerator at least 2 hours. Remove chicken from marinade. Place the marinade in a small saucepan and heat to a boil, then cool. Place the chicken on the grill over medium-hot coals until chicken is done,and juices
    run clear. Turn and baste frequently with reserved marinade. The bone-in nbreasts will take longer. Serves 4.


    Mint Marinade for Chicken

    Ingredients:
    4 sprigs fresh mint
    4 Tbsp. light soy sauce
    3 Tbsp. brown sugar
    2 Tbsp. red wine vinegar
    2 tbsp. lemon juice
    1/2 tbsp. Olive oil
    1 tsp. Garlic salt
    1 tsp. black pepper
    1 tsp. sugar

    Mix all ingredients. Use to marinate chicken for 1-2 hours or longer if you prefer. Follow the above instructions. Can be used on vegetables as well.

    Mint Marinade for Chicken

    Ingredients:

    1/2 tbsp. Olive oil
    1 tsp. Garlic salt
    1 tsp. black pepper

    Grilled Honey Tarragon Chicken

    Ingredients:
    2 tablespoons chopped fresh parsley
    2 teaspoons chopped fresh tarragon
    dash salt
    3 tablespoons honey
    1 tablespoon lemon juice
    4 boneless skinless chicken breast halves
    1/4 teaspoon salt
    1/8 teaspoon pepper

    Heat grill. In small bowl, combine parsley, tarragon, dash salt, honey and lemon juice; blend well. Enough for 4 servings of chicken.

    Easy Italian Marinade

    Ingredients:
    3-4 lbs. boneless chicken pieces
    1 bottle (16 oz.) Italian salad dressing
    1/3 cup fresh lemon juice
    1/3 cup honey
    1/4 cup Worcestershire sauce
    2 tsp. paprika

    Marinate chicken for 6 hours or overnight and grill.


    Lemon-Garlic Grilled Chicken

    Ingredients:
    2 tbsp. lemon juice
    2 tsp. olive oil
    1 garlic clove, minced
    1/2 tsp. dried oregano
    1/8 tsp. cayenne pepper

    Combine ingredients and pour over chicken. Refrigerate for at least 20 minutes, turning once. Enough for four chicken breasts.

    London Broil With Marinade

    Ingredients:

    6 lbs. London broil
    1/2 cup teriyaki sauce
    4 tsp. ginger, grated or chopped
    1 cup orange juice
    2 cloves garlic
    2 tsp. black pepper
    pinch of salt
    1 cup lemon juice

    Preparation:

    Score (make incisions with a sharp knife) the meat on a diagonal, then set aside. Thoroughly mix together marinade ingredients, pour over meat, then let set for at least two hours. Overnight is ideal. Cook on the grill.

    This marinade also goes well with turkey, if you don't care for red meat.

    Garlic Roasted Puree

    Ingredients:

    4 heads garlic
    1 tablespoon olive oil
    1/4 tsp. salt
    1/4 tsp. pepper
    1 tablespoon fresh lemon juice

    Preheat oven to 350 degrees. Slice off bottoms of the heads of
    garlic to loosen cloves. Leave skins intact. Place in shallow baking
    dish. Drizzle with olive oil. Bake for 20 minutes. Cool. Slip garlic
    from skins and place in food processor or blender.

    Add salt, pepper and lemon juice. (You can mash by hand) Process
    until smooth. Spread on bread, baked potatoes or grilled chicken.
    Makes 3/4 cup.

    Lemon-Thyme Barbecue Sauce

    Ingredients:

    3 tablespoons wine or herb vinegar
    1 tablespoon lemon juice
    2 tsp. Dijon mustard
    3 tablespoons olive oil
    3 tablespoons vegetable oil
    1/2 cup chopped green onion, white part only
    1/4 cup finely chopped parsley
    2 tablespoons chopped fresh thyme
    1 shallot, finely chopped
    Salt and pepper to taste

    Whisk together vinegar, lemon juice and mustard in bowl until smooth.
    Whisk in oils in slow, steady stream until sauce is blended. Stir in green
    onion, parsley, thyme and shallot. Season with salt and pepper. Great
    on grilled vegetables or meat. Makes 3/4 cup.

    Chicken Barbecue Sauce

    1 pint vinegar
    1 pint water
    1/2 lb. butter - no substitutions
    2 tablespoons salt

    Combine all ingredients in saucepan and heat. Place
    chicken on the grill. Baste with sauce and turn chicken
    every 4 to 6 minutes. Cooking time 60 to 80 minutes.
    Brush with sauce every 4 to 5 minutes.

    Fresh Rosemary Marinade

    Ingredients:
    2 Tbsp. fresh minced rosemary
    1/3 cup olive oil
    1 clove garlic,
    1/2 tsp. ground pepper
    1/2 tsp. seasoned salt

    Combine all ingredients in a small mixing bowl and pour poultry or
    meat that you've put in a large plastic bag, or container with a lid.
    Turn over the meat and rub marinade in. Pierce meat with a meat
    fork and refrigerate overnight. Cook as desired. This works well
    with a roast, steaks, or poultry.

    This is the only one I have a "recipe" for...Usually I just throw whatever's in the house together until it smells good!

    Grilled Honey-Soy Chicken (T&T)

    6 T. orange juice
    2 T. soy sauce (reduce sodium is fine)
    2 T. honey
    2 tsp. lemon-pepper seasoning
    1 tsp. ground ginger
    1/4 tsp. garlic powder

    Mix together. Makes enough for about 4 boneless skinless chicken breasts.
