    Rec: "Celebration Green Beans"

    I was reading my new TOH magazine today while waiting to get a test and saw this recipe and it sounded good to me and fit in with my diet so thought I would share for anyone else out there watching their waistline, or not.

    Celebration Green Beans
    Taste of Home October/November 2008

    1 - 1/2 pounds fresh green beans, trimmed
    2 Tbs. canola oil
    1 Tbs. cider vinegar
    1/4 tsp salt
    1/8 tsp. pepper
    1/4 cup sliced onion
    1 garlic clove, minced
    1 Tbs. butter
    2 Tbs. dry bread crumbs
    2 Tbs. Grated parmesan cheese
    Paprika, optional

    Place beans in a steamer basket; place in a saucepan over 1” of water. Bring to a boil; cover and steam for 7-8 minutes or until crisp-tender. Transfer to a 2-qt. baking dish coated with cooking spray.
    Combine the oil, vinegar, salt and pepper, drizzle over beans and toss to coat. Set aside.

    In a small skillet, sauté onion and garlic in butter until tender. Remove from the heat; stir in bread crumbs and cheese. Sprinkle over beans. Sprinkle with paprika if desired.
    Bake, uncovered, at 350° F for 18-22 minutes or until topping is lightly browned.

    Yield: 8 servings 
    3/4 cup = 82 calories

    Jan......I made these with the pot roast meat loaf and they're excellect...I did make a couple changes and reviewed them.....I think....I'll have to check!

    Yup-here's the picture...they're SO good-even though I did goof them up-the goof worked really well!!!

    Jan, thank-you for posting the recipe, it sounds great!

     

    Carol, you mean you stopped eating scones long enough to fix these...(lol, i am just pulling your leg) Did you take that picture? That is great! If you find your review can you tell us the tweaks you made or bump it up.

    Jill-here's the recipe that Jan posted  with my changes in it....must be another Carol that's been eating scones..don't think I've ever had one!!!Big Smile Wish I could say I was the one that took the picture, but I can't-it's my husband that's the camera whiz!

    CELEBRATION GREEN BEANS

    1 1/2 lb. fresh green beans, trimmed

    1 Tbsp. cider vinegar (I used 3 Tbsp. red wine vinegar-yup, I read the recipe wrong and I'm glad I did!)
    1/4 tsp. salt
    1/8 tsp. pepper

    1 garlic clove, finely minced
    1 Tbsp. butter
    2 Tbsp. dry bread crumbs (I used Panko bread crumbs)
    2 Tbsp. grated Parmesan cheese
    Paprika, optional (I sprinkled a little over the top before baking)

    Place beans in a steamer basket; place in a saucepan over 1" of water.  Bring to a boil; cover and steam for 7-8 minutes or until crisp-tender. Transfer to a 2 quart baking dish sprayed with nonstick cooking spray.
    Combine the oil, vinegar, salt and pepper.  Drizzle over beans and toss to coat. Set aside.
    In a small skillet, saute onion and garlic in butter until tender. Remove from the heat; stir in bread crumbs and cheese. Sprinkle over beans. Sprinkle with paprika, if desired.
    Bake, uncovered, @ 350 degrees for 18-22 minutes or until topping is lightly browned (I found it only took about 15 minutes). 8 servings.

    NOTE: When the green beans hit out plates, we added a squirt of spray butter-not too much-I think it really added a nice flavor.

    Carol I am a nut cake!!! I read your review with your tweeks and really liked it so much I copied it. Where was my brain yesterday??? Good grief. I am going to try it your way because when I was reading it I thought it said Panco and when I typed it, it said bread crumbs so I must have been thinking of your post and now I know why. Dahhh, my the brain is going fast, however it was a looong day yesterday in my behalf, LOL
    Thank you for jogging my memory.

    Jill I have mentioned scones from time to time because of my heritage. I said I teethed on them but need to make some because I haven’t had any since my Mom’s memory went as she was the scone maker. My youngest son calls them Scooorrrrne’s . This is his American attempt at a Scottish accent.

    Thanks Carol. Great close up shot, thank dh for us. Hmmmm, I am old and feeble so now I'm not sure who was on a scones kick. Maybe Deonia?? Oh well, sorry about that.

    Big Smile Jan-don't WORRY about it!  I'm glad the recipe and picture appealed to you enough to copy it!  And I hope you like them...we really did-and my husband-who has about had his FILL of green beans for this year because the garden wouldn't quit giving them to us-wants these AGAIN....for him-that's amazing!  You can certainly cut back on the vinegar and use what the original recipe has but we really liked it with the extra-and the red wine vinegar was really good too.  I always tend to make my oil and vinegar dressings heavy on the vinegar and lighter on the oil so maybe that's why the extra vinegar tasted good to us.

    Oh Jill-you're not old and feeble......with so many people here posting SO many good recipes, it's hard to remember who posted what!  I WISH I was the one eating scones, believe me!!!
