    Yes [Y] RecRev - 3-MINUTE CHOCOLATE CAKE IN MUG

    I wanted to make a treat for my husband, but a whole cake sits around too long. So, I decided to make the Microwave Cake in a Mug recipe that has been flying around online lately.

    Some people said they problems with the cake overflowing, and cautioned to use a large mug. The two cup Pyrex measuring cup worked perfectly. This recipe makes one very generous serving (OR easily serves two).

    3-MINUTE CHOCOLATE CAKE IN MUG for a 1000 watt microwave oven*

    1 large coffee mug
    4 tbsp flour
    4 tbsp sugar
    2 tbsp unsweetened cocoa
    1 egg
    3 tbsp milk
    3 tbsp vegetable oil
    small splash of vanilla
    3 tbsp chocolate chips (optional)

    Spray mug with cooking spray, then mix together all the ingredients in the mug, in the order given: first mix all dry ingredients, add egg and mix, then milk, oil and vanilla and mix well. Stir in chocolate chips.

    Place mug in microwave, and cook on high for 3 minutes (more or less depending on your microwave). The cake will rise over the top of the mug, but don't be alarmed. It will not overflow. Allow to cool a little then eat it with a spoon directly from the mug, or tip out onto a plate.


    MY CHANGES:
    - Use a two-cup Pyrex measuring cup instead of mug
    - Mix the egg, milk, oil, and vanilla separately before adding to the dry ingredients (prevents tough cake due to overmixing).

    * Chefly said the cooking time should be reduced to 1 minute 43 seconds for a 1250 watt oven.  (A toothpick should come out with small crumbs.)

    Whip the egg white separately, and gently fold into the rest of the ingredients.

     Vicki,

    I agree with you completely, mix the liquid ingredients separately to prevent a tough cake. I also found if you bake it for less time until there are just moist crumbs the texture is better. The microwave cooking continues once the cakes are removed. My first couple of mugs were overbaked and tough because I followed the recipe exactly. 

    These are nice treats and fun to eat. We topped ours with a drizzle of chocolate syrup and a scoop of ice cream. Yum.

    Hello Vicki, and all bakers and cookers

     

    I have a couple I have tried so nice to have a small amount for a small family and fun for the children,

     

    Spicy 5-Minute Cake

    Ingredients:

    4 Tablespoons all-purpose flour
    3 Tablespoons sugar
    2 Teaspoons spice (cinnamon, ginger, whatever you like. Add more/less if you want!)
    1/8 Teaspoon baking powder
    1 Egg white
    3 Tablespoons milk (or soy milk)
    2 Tablespoons vegetable oil
    1/4 Teaspoon vanilla extract
    1 Microwave-safe bowl or mug

    Instructions:
    Mix flour, sugar, spice and baking powder
    Mix in egg white
    Pour in milk, oil and vanilla, and mix well
    Put in microwave for 2.5 minutes (add 30 sec if necessary) on maximum power (1000 watt)
    Wait until it stops rising and sets in the bowl/mug

    Jell-O 5-Minute Cake

    Ingredients:

    4 Tablespoons all-purpose flour
    3 Tablespoons sugar
    1 Teaspoon sugar-free Jell-O powder, any flavor
    1/8 Teaspoon baking powder
    1 Egg white
    3 Tablespoons milk (or soy milk)
    1 Tablespoon vegetable oil
    1 Heaping tablespoon unsweetened applesauce
    1/4 Teaspoon vanilla extract
    1 Microwave-safe bowl or mug

    Instructions:
    Mix flour, sugar, Jell-O and baking powder
    Mix in egg white
    Pour in milk, oil, applesauce and vanilla, and mix well
    Put in microwave for 2.5 minutes (add 30 sec if necessary) on maximum power
    Wait until it stops rising and sets in the bowl/mug

    Peanut Butter and Chocolate 5-Minute Cake

    Ingredients:

    4 Tablespoons all-purpose flour
    3 Tablespoons sugar
    2 Tablespoons peanut butter (add more if you want!)
    1/8 Teaspoon baking powder
    1 Egg white
    4 Tablespoons milk (or soy milk)
    1 Tablespoon vegetable oil (or unsweetened applesauce)
    1/4 Teaspoon vanilla extract
    1/8 Cup mini semi-sweet chocolate chips.
    1 Microwave-safe bowl or mug

    Instructions:
    Mix flour, sugar and baking powder
    Mix in egg white
    Add in milk, peanut butter, oil and vanilla, and mix well
    Put in microwave for 2.5 minutes (add 30 sec if necessary) on maximum power
    Wait until it stops rising and sets in the bowl/mug

    Allergy to chocolate.....

    5 Tablespoons cake flour
    4.5-5 Tablespoons sugar
    1 Egg
    1 tablespoon vanilla
    3 Tablespoons milk
    3 Tablespoons oil

    Add the vanilla after the egg, with the milk and oil.

     

     

    To Make Cake Flour

    Ingredients

    • 1 3/4 cups  all-purpose flour 
    • 1/4 cup  cornstarch 

    Directions

    1. To make two cups of cake-and-pastry flour (cake flour), combine 1 3/4 cups all-purpose flour with 1/4 cup cornstarch; proceed with your recipe.
    2. The easiest way to do this substitution is to put 2 tbsp of cornstarch in the bottom of a 1-cup measuring cup, then fill the cup as usual with all-purpose flour and level top. Repeat process to get your two cups.
    3. If you only need 1/2 cup of cake flour, put 1 tbsp cornstarch in bottom of 1/2 cup measuring cup, then fill and level as above.          Susan

    Here is one for a low carb diet, if you can not use flour... it comes out more like a muffin than a cake

     

    1/4 cup flax meal
    1/4 teaspoon baking powder
    1 egg
    1 packet Splenda
    1 teaspoon butter

     

     Microwave for 1 minute or so (assuming 1000 watts)

     add cinnamon (2 tsp) as well, and  put butter on it after cooking. But cocoa might be nice too.

    You can mix up a large batch of dry ingredients ahead of time and store for a ready-to-use muffin mix.
