'Beat & Eat' Frosting

    Big Smile [:D] 'Beat & Eat' Frosting

    I started baking cake mixes when I was about 10 or so; the late 50's, early 60's. One of the easiest frostings I made was from the back of a coconut can. Can not remember the brand name of the Coconut but the frosting was called 'Beat & Eat' (or 'Beat and Eat'). It was not a cooked frosting, & more than likely used powdered sugar. But I cannot remember any other ingredients. It was pure white, very fluffy and delicious. Hope someone remembers this easy recipe. We lived in the Cincinnati area, perhaps the recipe was only available in that area, don't know. Would really like to be able to make this again. Thanks for all your help!!!     I found this on an internet search.  Is this the recipe you are looking for?

     

    Beat ‘N Eat Frosting

    3/4 cups sugar
    1/4 teaspoon Cream of Tarter
    1 teaspoon Vanilla

    1 egg white unbeaten
    1/4 cup boil water
    1 package Baker’s coconut

    Place sugar, cream of tarter, vanilla and egg white in small deep bowl. Mix well.

    Add boiling water to egg white mixture. Beat with rotary egg beater or at high speed electric beater until mixture will stand in stiff peaks.

    Makes 3 cups of frosting.

    Oh, Margielou_wa!!! If that's not it, it is so close it doesn't matter!!! :D Thank you so much!!! Didn't remember the egg white, or water but now remember the cream of tartar. lol...It's so often the things we remember from our childhood that are the best...Glad to have this memory restored! Thanks again.
